Lemon-Cream Cheese Cupcakes

These cupcakes were a little time consuming, but delicious. I would suggest baking them for only 21 or 22 minutes, not the full twenty-five. I put a knife in the middle to check it, but the cupcakes seemed like they needed to bake longer when they were in fact done. I think this has to do with the pudding being added, but I am not sure. This was the first time I made a cake with pudding mix. Other than that they were wonderful. I think next time I will add the lemon zest to the cake mix for a little extra lemon flavor.

Giblet Gravy I

This gravy is FANTASTIC! I have made it the last two years for Thanksgiving, as well as Christmas dinner this past year. It has a wonderful flavor. Take it off the heat a little before it reaches the consistency you prefer. The gravy will thicken as it cools.

Pecan Pie V

This is by far the BEST pecan pie I have ever tasted! The sugar caramelizes the top of the pie, making a wonderful crispy top. This dessert has become a staple at our Thanksgiving meals, and it never lasts long. I won't go back to a corn-syrup pecan pie ever again!

Extreme Chocolate Cake

I really loved how this cake turned out. I thought I messed up because the batter was really runny, but once it baked, it was amazing. Boxed chocolate cake just doesn't cut it anymore in this house!

Mom's Zucchini Bread

I was actually looking for a savory zucchini bread recipe when I stumbled upon this recipe. I had never even heard of something like this before. I decided to make it anyway because I had fresh Zucchini from the farmer's market. I definitely recommend letting the bread cool all the way before eating it. The sweetness is very different once it has cooled versus hot out of the oven. I made one loaf for the house and one loaf for the office. Everyone at work LOVED it. I will definitely make this again.

Cottage Pudding - Upside Down Cake

I was extremely impressed with this recipe. I followed the directions, except I added 1/3 tsp. of cinnamon to the cake mix. When it came time to alternate the milk and flour, I added 1/3 of the flour mixture, then 1/2 the milk, then 1/3 flour... so on and so forth. The cake came out very moist and very tasty. My [Granny Smith] apple slices were about 1/3 inch thick. The recipe did not specify that part. I think next time I will increase the thickness to 1/2". The only mistake I made was using a two-part pan. The apple juices and butter actually leaked out through the bottom a little and got some smoke circulating in the house before I was able to put another pan underneath of it. I can't wait to try this with pineapples (and a single-part pan) next time. :)

Roast Beef Tenderloin

I've made this recipe twice now. I followed the recipe exactly, and it turned out wonderful! Definitely will use this recipe every time I make tenderloin.
