Zippy Shepherd's Pie

I love one pot meals and this dish has EVERYTHING in one place! Veggies, meat, carbs... even dairy! It's so delicious and easy to make, especially for busy people like us that don't want to slave over a hot stove after a full day of work.

Creamed Spinach I

Broccoli and Rice Stir Fry

Classic Tiramisu

I made this recipe last night and it turned out delicious! I added spiced rum to the strong coffee. Approximately 1 part rum to 2 parts coffee and this can be changed depending on how strong you like the taste. I used hard ladyfingers and poured the coffee/rum mixture on top of the cookies instead of dipping them. I added cocoa powder to the top and sprinkled semisweet chocolate chips on top as well. I brought it to work today and everyone said it tasted amazing! Definitely worth the trouble!

Butternut Squash Soup II

I made this recipe following a few different suggestions from past reviewers. I baked the butternut squash whole in the oven at 400 degrees for 50 minutes. This made it a lot easier to peel and clean. I did not use celery because I didn't have any on hand. I added salt, pepper, curry powder, cinnamon and nutmeg and the taste was delicious and hearty!! When serving add a dollop of sour cream in the middle and some bagel crisps or toasty bread on the side. Delicious and warming to the soul!
