Microwave Peanut Brittle

TRICKY! very crisp and crunchy- good flavor BUT, took me THREE times to figure it out even after reading many reviews! I have NEVER used the microwave, so I thought why not try it, it sounds easy enough! Well, its NOT easy. Here is my process: The first time I made it I didn't blend the sugar and corn syrup- when I took it out to mix in nuts, the sugar mixture was on the bottom uncombined. I tried to stir it- but it turned into a MESS. I put the bowl into the sink with hot water and dish soap. ugh Next time I made it I blended with a spatula the sugar and corn syrup and followed the cooking time exactly and it burned!! Grrr... dark orange color with an awful smell. Time to clean up again!!! The THIRD time I cut the first cooking time to 3.5 minutes, second to 3 minutes and third to 1 minute. Yay, it didn't burn. Make sure ADD ingredients fast after taking out each time. When it was finished I took it out and wiggled the brittle around trying not to ruin the light fluffy foam and it turned out fine. I gave it 4 stars because it took me 3 times. The recipe was written too simply- like it was a breeze to make on a first try. There are many smart decisions you have to make to end up with a good result. I can't imagine anyone making it work right the first time. What I expected to take 30 minutes took me over and hour and a half. Messy and wasted too many ingredients. To be honest I won't make it again, I'll stick to stove top. whew!

Peanut Butter Chicken Skewers

delicious! With cooking sauce, and prepping the chicken- it took me over an hour to make these. It was difficult for me to place the meat on the sticks- But the flavor was incredible. I will make the sauce next time but not skewer the chicken- simple chicken strips on the grill will be perfect! Yum, thanks for the recipe!

Basic Baked Spaghetti

pretty good but not something I'd make again. Fast and easy for sure, just not the flavor I wanted. To change the flavor- add more spices to the sauce and use sharp cheddar or parmesan cheese.

The Best Thai Coconut Soup

so good! I couldn't find lemon grass- or the paste- so I added 2 finely chopped tablespoons of leek. I also used small pre cooked frozen shrimp. The flavor was great but next time I will buy lemon grass and fresh shrimp! yum. yum yum.

YUM! I'm always looking for pressure cooker recipes- so glad I found this one! I followed the recipe exactly as written. My family and I loved it... I will make it again. We had leftovers and made sandwiches the next day- they were awesome. You have to try this!

The Best Meatballs

A M A Z I N G ! My new favorite meatball recipe! Only changes I made were: I used fresh sourdough bread to make my own bread crumbs. Only meat I used was- ground beef. I followed the directions to a T. The meatballs were tender and full of flavor! You must try this recipe.

Tuna Noodle Casserole II

not my fav. it's dry, bland and the onions were still crunchy after 20 minutes. This is one recipe that needs tweaking. Terrible as leftovers too. I will not make this again. bummer.

it's ok. I liked the lemon zest- it's a very unique flavor. What I didn't like was the soup was way too greasy. I used extra lean ground beef. Not sure what happened.
