Homemade Flour Tortillas

First time making tortillas and these did not disappoint! I scaled the recipe in half, used part whole wheat flour and made 8 tortillas. Cooked them in a dry cast iron skillet. These cook very fast. Literally in seconds. Looking forward to seeing how the leftovers hold up. The tortillas made great tacos.... didn't crack or leak at all!

French Bread

This is an easy and tasty bread. I scaled the recipe in half, used fresh milled hard white wheat berries, added 3T of vital wheat gluten to help with the rise (since I used whole grain flour), and kneaded in grated parmesan, olives, and fresh rosemary. It was very good and is going in my recipe box to be made many more times in the future. Looking forward to making paninis with the leftovers tomorrow.

Whole Wheat Banana Nut Bread

This bread is really wonderful. I substituted brown sugar for the honey, added some chocolate chips, and used freshly ground multigrain flour (white wheat, quinoa, brown rice, millet, and barley). 3 mini loaves baked for 35 minutes at 350.

Pumpkin Muffins II

Very good. Took some liberties with the recipe.... cut the recipe in half, only used 1/2 cup of sugar, some whole wheat flour, in place of the half an egg, I added a bit of yogurt and some milled flax seed. I also didn't have enough pumpkin, so I rounded out the quantity wih mashed banana. Added chcocolate chips too. Got 13 muffins.

Boiled Bagels

Very happy with the results. I used the broiled option and boiled the bagels for only 2 minutes per side. I made 10 larger bagels. I've topped some with sesame seeds and made some cinnamon raisin in addition to the plain. Very good! I anticipate making several other variations in the future. Thanks for a great recipe!

Cranberry Orange Loaf

Loved this recipe! I've made it a couple of times. Added cinnamon to the batter and subbed pistachios for the walnuts. A simple powdered sugar glaze over the top is great too. They make a nice hostess gift for the holidays when wrappped in waxed paper and tied with bakers twine.

Soft, Moist and Gooey Cinnamon Buns

These are by far the best cinnamon rolls I've ever made. In fact, I've been using this recipe for christmas gifts for my neighbors for over 10 years. I make the dough in my kitchenaid mixer, place the rolls in disposable aluminum foil pans, wrap in plastic wrap and freeze. We deliver them with a little gladware of cream cheese icing/glaze with instructions on how to thaw overnight and bake christmas morning.

Cinnamon Syrup

Really good!! I used 1T of clearjel in place of the flour and added a t. of butter at the end. Also doubled the cinnamon. My 9 year old is in love!

Fisherman's Catch Chowder

This was GREAT!! I cooked the vegetables, herbs, clam juce and wine during the day in the crock pot, then added the cubed fish during the last hour. Flour, butter and cream at the end. I also added 5 baby red potatoes. This soup is really good! A nice crockpot addition.

Zucchini-Chocolate Chip Muffins

These are great! I've made them several times. Sometimes subing whole wheat flour (all or part), brown sugar for the white, and sometimes I'll throw in milled flaxseed. My 1st grader packs them for his morning snack at school. Great way to use up frozen zucchini too (thawed and drained).

Holiday Cranberry Chutney

Tastes Great! For those who are canning, this makes just under 2 pints. I used orange juice for the water, cut the sugar to 3/4 cup, added fresh grated orange peel and grated ginger, I also added 1/4 cup honey and an extra apple. Yum! By the way, a 12 oz bag of cranberries is about 3 cups.

Apple Strudel Muffins

Great! Made quite a few modifications. Used half whole wheat flour, half brown sugar, added 1/4 milled flaxseed, 1/4 cup apple butter, an extra 1/2 cup of shredded apple, and added 1 t. cinnamon and 1/2 t .nutmeg. I omitted the topping completely. Didn't need it in my opinion.
