Crispy Orange Beef

Prepared this recipe last night and we enjoyed it. It was not too sweet and definitely tasty. I do think the coating benefits from the addition of egg white with the cornstarch for crispness of the final product, which is how I usually prepare it. Chinese Orange Beef is a Szechwan dish which we prefer to be more spicy hot. That is not meant to deter someone else from trying this dish. Not everyone likes 'hot' dishes.

Ricotta Cheese Pie I

First let me say we like Ricotta cheese, but this pie is best left unmade. I found it basicly sweet w/o much flavor. My husband did not like it either. Use your time and ingredients for a more worthwhile dessert.

Salmon with Fruit Salsa

My husband said I should always make the salmon like this. The salsa is very good on the salmon and would probably be good on chicken or pork, which I will try in the future for variety. With the leftover salsa I found myself putting it on a ritz cracker as a snack.

Creamy Shrimp and Corn Soup

This soup is quick & easy to make, however, the butter could be cut in half. During the cooking of the onion in butter, 2 Tablespoons of flour could be worked into a roux to make the soup a bit thicker. I used the lo-fat celery soup and crm of shrimp soup in place of the chicken. Shrimp soup should be shrimp!! I did feel it needed extra seasonings which I added. All in all I will probably make it again with some slight changes. I had to omit the corn for my husband's diet, but he ate 2 bowls.

Mexican Baked Fish

We both liked this recipe a lot. I used farm-raised catfish and it was 'delish'. Those of you not yet familiar w/ farm-raised catfish - it is a very mild fish and adapts to any recipe.

Brown Family's Favorite Pumpkin Pie

My husband declared it 'delicious' even tho his half of the pie had no nuts [he can't eat nuts]. I will make this pie again for the holidays.

Chocolate Chip Cheesecake I

Excellent recipe and makes a LARGE cheesecake. Would offer one suggestion, to spray the bottom ONLY of the pan with non-stick spray. I had a little trouble getting it loose from the bottom. Another idea for chocolate lovers would be to melt the chips and swirl the chocolate into the batter after putting it in the pan. I may try the basic recipe without chips in other flavors.

Cappuccino in a Jar

This is my second cup of morning coffee! I have one cup of 'hi-test' to wake up and my 2nd is this recipe, which I make with decaf coffee crystals. It's just sweet enough to satisfy my sweet-tooth in the afternoon and I find it filling, which keeps me from nibbling those extra calories. I mix it in the food processor and it becomes very fine and well mixed. Thanks for sharing you recipe!!

Cheddar and Macaroni Salad

Finally!! A pasta salad that I like. My family and grandchildren loved it, too. I also tried it with some leftover Macaroni and Cheese [of the popular variety] and it was also delicious, I just omitted the cubed cheese. It's a good way to use it up without eating it as "leftovers".
