Megan's Granola

Reviewed: Jun. 27, 2012
This is some really delicious granola. I do, however, make the following changes: 1. I double up on the sauce, I really like my granola to stick together and I found that doubling it does the trick. 2. I add a little ground ginger (about one teaspoon) into the sauce. 3. I cook at 275 degrees for 32 minutes, stirring every 8 minutes. 4. I added crystalized ginger as my dried fruit. It phenomenal especially when eaten with Greek Yogurt.

Banana Banana Bread

Reviewed: Apr. 4, 2012
This is my go to banana bread recipe. I add about 1/2 cup or walnuts into the batter and then sprinkle brown sugar on top before baking. So delicious.

Simply perfect. I used whole grain mustard and reduced fat olive oil mayo. Absolutely delicious.

Slow Cooker Cranberry Roast

Reviewed: Oct. 25, 2011
This makes the richest yummiest pot roast. One word of warning though, make sure you watch the roast closely. I made the mistake of putting a roast in and then leaving for a few hours while the crock pot was on it's lowest setting. By the time I returned, there was barely enough juice to make a gravy. I use cornstarch and water to thicken it up. Delish!

Fresh Southern Peach Cobbler

Reviewed: Oct. 25, 2011
This is my go-to dessert. I find that this recipe can work with peaches that aren't ripe so if anyone has some, no worries. I double the topping, as others do. This recipe makes the best peach cobbler.

Breaded Chicken Fingers

Reviewed: Oct. 25, 2011
These are really delicious. I opted to bake mine instead of frying them. I baked at 425 for twenty minutes, flipping the chicken half way through the baking time. At the end, I sprinkled some olive oil on top and then broiled them about 45 seconds on each side. I also added a little parmesan, Italian spices, cayenne pepper and old bay to the bread crumb mixture. These were absolutely delicious and very tender.
