Spinach Chicken Pockets

Super easy and yummy! I didn't have plain yogurt on hand and replaced it with lite sour cream, which worked out fine. I needed a make-ahead meal, so I had the chicken cooked, greens chopped, and sauce mixed and stored in separate containers. Heated the chicken, mixed everything, and dinner was on the table 5 minutes after I walked in the door! Will definitely be making this again.

Southwestern Egg Rolls

I didn't do this recipe exactly, but I had to give it a five based on the great mix of ingredients and spices! I made the chicken, jalepenos, corn, full can of spinach, and spices into quesedillas with considerably less cheese than called for and they were awesome. When I have more time I'll try the actual egg roll recipe!

Double-Crust Rhubarb Pie

Yum! I didn't have quite enought rhubarb ready in my garden, so I threw in a few strawberries from my freezer and cut the sugar a bit to compensate. Turned out great - thanks for the recipe!

Mexican Rice II

I hadn't made Mexican rice before (always grabbed a box at the store), so I was a little nervous putting the bowl down in front of the family. Both hubby and kid liked it way better than the pre-seasoned rice I had been buying! Only change I made was replacing the tomato sauce with enchilada sauce, since I was had a can open anyway.

Spinach Balls

Love this idea! I turned this into my new favorite veggie burger to pack for my work lunches. I used my food processor to speed up prep time. I don't buy stuffing mix so I started with a few slices of whole wheat bread, then added a tsp of poultry seasoning, threw in a small onion, used fresh garlic, and omitted the butter altogether. Made 4 large patties out of this, and topped it with a little mayo and spicy mustard on a whole wheat bagel.

Aunt Teen's Creamy Chocolate Fudge

First time fudge maker, so happy to say it was a success! I did cut butter to 1 Tbs as others had suggested. I used 2 C of semi-sweet chips, and 1 C of peanut butter chips because I belive that peanut butter makes anything better. Chips were store brand, as well as the evaporated milk, and they didn't give me any problems, but I did stick with the Jet puffed marshmallow. Boiled for 6.5 minutes on medium low, and my fudge turned out firm but not crumbly. Thanks for the recipe and suggestions!

Great recipe - thank you! I couldn't find the pearl couscous so I used the small grain kind. Don't know if it made a difference, but the end result was definitely a hit.

Lentil Soup with Lemon

Perfect! I took this soup to work for lunch so I left out the last drizzle of olive oil and added a bit more chili powder to the initial pot when cooking, but this is my new favorite soup. Easy, healthy, and delish!

Iced Pumpkin Cookies

Thanks for the great recipe! Just for fun, I replaced all the butter with applesauce, used a full can of pumpkin, and used a mix of whole wheat flour, milled flaxseed, wheat germ, and all purpose flour. Per other reviews, I used half brown and half white sugar and topped with cream cheese icing. I just ate four and they are amazing!

Man's Way Sausage

Great recipe! I used just one pan on my stove because I despise dishes - used 2T butter to fry up the diced potatoes with peppers and green onions and seasonings while I cut the sausage, then put those in the 9x13 while I quickly browned the chopped sausage, then I dumped the sausage on top of the potatoes while I scrambled the eggs. Spead the scrambled eggs over the sausage, topped with cheese, and popped in the over for 10 minutes at 400 degrees, just to melt the cheese. Took me about 35 mintues start to finish this way. As promised, my man liked it, and so did I!

Butternut Squash Soup II

Soooo much better than any soup you can buy! As other reviews suggested, I skipped the celery and switched the regular potato with a sweet potato. One batch I added an acorn squash too, and it turned out great. Next time I'm going to try shallots instead of onion...my opinion is that most great recipes are also very forgiving. :-)

Sausage and Bean Ragout

Replaced the olive oil and basil with about 3T pesto because I didn't have fresh basil on hand, and used just Italian sausage for meat, otherwise prepared as written. My husband went back for thirds, so I would say it was a success!

Grandma Gudgel's Black Bottom Cupcakes

These didn't turn out for me at all. I do a decent amount of baking, so I don't think I totally botched the recipe, but I very well may have. The taste was very good, but the batter did some weird boil over while baking business, and then the finished result was some gooey, weird, uneven little creatures that I can't call cupcakes. I thought maybe the fat free cream cheese I used was a bad choice.
