This recipe is delicious. I want to double check the nutritional information of the ingredients used because the amount listed on allrecipes for fat and calories seems a bit high. I did use low fat chicken broth, that may make a difference. I sent a friend to get the pine nuts and they were $29 a pound so we substituted roasted, salted sunflower seeds and they went well with the recipe. I used currents instead of raisins as that is just what I happened to have in the cupboard. I had allrecipes calculate for six servings and two of us ate most of the quinoa (with only salad on the side) and left enough for me for lunch the next day.
