Lemon Chicken Strips

Reviewed: Jul. 6, 2011
This is VERY lemony. The chicken and sauce were good but the sauce did not glaze the chicken, it's too thin. Using Splenda left an awful fake aftertaste. My family didn't seem to notice too much. I would make this again but I would use sugar and maybe even add 1/2 a teaspoon of corn starch to thicken the sauce so that it coats the chicken better.

Mango Sorbet

Reviewed: Jul. 1, 2011
Delicious! Like summer in a bowl. Great mango flavor and beautiful color. I doubled the recipe and added a little extra lime juice. Would be fabulous with a sprig of mint and lime wedge.

Breakfast Kolaches

Reviewed: Jan. 18, 2012
These were great. If you don't have a bread machine, you have to use two packets of yeast. I filled with scrambled eggs, cheese and jalapenos, made them into little, or not so little, balls and baked. Rancheros all the way!

Chicken Chimichangas with Sour Cream Sauce

Reviewed: Jan. 18, 2012
OMG! If I could give this 10 stars I would. PLEASE use the 3 c. of water and let it cook down. Those of you who didn't have no idea what you're missing. The sour cream sauce was so incredible we put it on rice as a side dish. I did take another poster's advice and baked them at 425 for 15 mins to eliminate some fat. So amazingly good. My family no longer needs to go out to our favorite Mexican restaurant, this is that good. Followed the recipe as printed and will serve again and again!

Mexican Wontons

Reviewed: Jul. 6, 2011
I added cream cheese and a can of diced chilis to the pepper jack cheese. Addictive! I made Amy's Cilantro Cream Sauce for dipping. We ended up not even eating dinner, just the wontons!

Restaurant-Style Coleslaw I

Reviewed: Jul. 3, 2011
Wonderful! Even my 3 year old ate seconds. This is just like the way I remember the Col.'s slaw when I was a kid. Just sweet and tart enough. Perfect. Will make again and a again.

Teriyaki Chicken Pizza

Reviewed: Jul. 1, 2011
Very good. Based on other reviews, I used teriyaki glaze. I added extra pineapple and cilantro. The sweetness of the extra pineapple cut some of the saltiness of the teriyaki. The whole family liked it. It's a nice addition to our other pizzas.

Italian Lasagna

Reviewed: May 22, 2011
I wasn't that impressed, especially for the time involved. The flavor was good but it was a little dry for my liking and putting the cheese on top to cook the entire time made the cheese too crisp, almost burned. The bacon in the gravy was a little unncecessary, you really couldn't taste it. If I made it again, I would put the cheese on about half way through the cooking time and I would cut the cook time by about 20 minutes. My family thought it was okay but I was hoping it would have been over the top good, as other reviews stated.

Mongolian Beef and Spring Onions

Reviewed: May 16, 2011
Loved this!! Just like at a restaurant. Like others, I used less brown sugar and added steamed broccoli at the last minute. Served over sticky rice. Definitely a keeper; easy and delicious.

Squash Casserole II

Reviewed: Aug. 17, 2011
This was so good, I wish I have more squash from the garden. I didn't have bread crumbs or fried onions on hand so I sauteed some onions in butter and added them in and I used corn flakes on top to give it a crunch. The whole family gave it a thumbs up.

Holy Cow, these are good! My 3 year old daughter gobbles them up. I'm replanting beets this week just so I can have more to make this recipe.

Carolina BBQ Peppers

Reviewed: Aug. 17, 2011
Over the top good! I put the peppers on pizza, along with a little of the sauce. Holy cow! I didn't seed the peppers because we like it hot. DO NOT throw out the sauce when the peppers are gone. We've been eating it on chicken, scrambled eggs, you name it. Definitely a keeper and I'll give out as gifts at Christmas, as I have an unending supply of peppers.

Amy's Cilantro Cream Sauce

Reviewed: Jul. 6, 2011
Delicious! Lots of subtle flavors and pretty color. My husband added a whole jalapeno while we were blending to spice it up. It made the color even better and was still great. I couldn't taste all the subtle ingredients with the jalapeno in it but it was still wonderful. I could just eat this alone with a spoon. Will make again and again.

Classic Tapioca Pudding

Delicious. I wish it was a little less congealed but I think I left out 1/2 a cup of milk. Wonderful flavor. Will make again and add 1/2 c. more milk.

Crustless Cranberry Pie

Reviewed: Jan. 18, 2012
Super yummy way to use cranberries. Didn't have walnuts so I used chopped almonds (didn't have sliced). Next time, and there will be a next time, I will just forgoe the nuts completely. It's good enough on it's own. Might add a little orange zest. You must serve warm with a scoop of vanilla ice cream. My entire family, young kids too, loved it.

Reuben Pizza

Really great. Couldn't get corned beef at our small town grocery so I used turkey pastrami and just chopped it up. Used extra 1000 Island like others had suggested and left off the caraway seeds. Definitely will make again.
