Salmon Chowder

Reviewed: Apr. 7, 2013
Delicious! I was looking for a different way of cooking salmon to make it stretch further, and decided to try this recipe. It was really really good, and we're even going to make it for company. I used fresh garlic and salmon as suggested, and added the salmon at the end and simmered it for 5 minutes. Then, after the fish was cooked, I removed it from the heat and stirred in the cheese until it melted (I estimated and probably used about 2 cups, and it didn't taste too cheesy to me at all). I also thickened it with about 1-2 T flour. Since I used homemade chicken stock, I waited to add the salt, and probably used about 1/2 tsp or less. Definitely keeping this recipe!

Spicy Cheesy Refried Beans

Reviewed: Feb. 2, 2013
This is a delicious refried bean recipe! Adding the cream cheese... what a great idea! This side dish will give your main dish some hefty competition for center stage. I also didn't have spicy refried beans so I added 1/8 tsp Cayenne, and I think next time I'll add even more. I also used a mixture of pepper-jack and cheddar cheese. The only thing I'd caution about the recipe is the serving sizes: the recipe says it makes 6 servings, but those would be 6 measly little servings that would only leave you sad and wanting more (each serving would be about 1/3 of a cup, which might be a true "serving," but most people tend to eat more than that for beans). I made the recipe for a dinner with 6 people, and after making one batch, decided I needed to double the recipe. I'm glad I did because at the end of the night there was only a spoonful left, and everyone commented on how yummy they were and kept going back for 2nds, 3rds, and 4ths!

Creamy Tomato-Basil Soup

Reviewed: Aug. 21, 2012
This was not very good... I'm not sure what other people found so appealing about it, unless of course, they did not make the actual recipe and instead made a ton of changes and then gave their own recipe 5 stars! The flavor was ok, but it was so thin and watery, and too much basil for my husband's tatses. If you're going to go ahead and make it, use way less broth and maybe some extra tomatoes perhaps

Black Beans 'N' Rice

Reviewed: Apr. 20, 2012
I'd probably give this recipe about 3.5 half stars if i could. i followed the recipe exactly except used a little bit less water based on other reviews. it wasn't bad... it just seemed to need "something" extra, like maybe more spices? I agree with another reviewer who said the ham was dark by the time it was done. the ham looked grey and seemed to have lost all flavor. so if i decide to make it again I'd add the ham in the end. oh ya I also pureed some of the beans and added them back to make it thicker

delicious! i added some cooked chicken (to make the men happy), and doubled the garlic and red pepper as some had suggested. also used roasted tomatoes packed in oil because the grocery store was out of sundried. very tasty and simple.

Banana Sour Cream Bread

Reviewed: Jan. 15, 2012
I thought it was just ok. Maybe it's just that I prefer my banana bread to be very dense and soft, and this was more light and cake-like.

Honey Ribs

My husband was literally sucking the marrow out of the ribs he said it was so good lol. I used St Luis style ribs because I couldn't find babyback, and it was still amazing

Mexican Shepherd's Pie

Reviewed: Sep. 28, 2011
this was great!! i was skeptical at first, but it turned out really good and my husband and i loved it. very simple and quick to make, using a lot of stuff you probably have on hand. I put cheese on top of the meat mix, and used 2x the amount of cornbread mix as suggested. Definitely keeping this recipe!

Slow-Cooker Pepper Steak

Reviewed: Sep. 15, 2011
I am at a loss as to why this recipe is rated so highly... I followed the recipe exactly, and needless to say my husband and I did not find it enjoyable at all. The only thing I can come up with is maybe families with children have different tastes than couples without kids? I dont know, but I will not be making this again.

Make Ahead Lunch Wraps

Reviewed: Sep. 13, 2011
I agree with the person who said this was a great base recipe- first time I made it I followed the recipe exactly and it was 4 stars good ;) My husband loved them to take to work, but personally I think they could use a little spicing up and more flavor, so this time I used fresh, pan seared corn, and tried other people's suggestions of cilantro, cumin, seasoning the rice, etc, and can't wait to try them! Definitely a keeper, and very flexible too depending on what you have on hand or prefer

Raspberry Tilapia

Reviewed: Sep. 7, 2011
I'm giving this a 3 because my husband (who enjoys sweet things) really liked it, and I really didn't lol. So i averaged our respective scores. I made it how the recipe said, except I very lightly salted the fish first. It was definitely overpoweringly sweet, so unless you really like stuff like that, I'd suggest modifying it or finding a different recipe.
