Watermelon Fire and Ice Salsa

AMAZING! I left out the cilantro because I hate it and added habanero peppers because we like it hot! The sweetness of the melon pairs perfectly with the flavor if the habanero (and the orange color adds a nice touch). I took a milder version to a work potluck and it was a huge hit - everyone wanted the recipe!

Grilled Fish Tacos with Chipotle-Lime Dressing

This recipe is sooooo delicious. We were craving REAL fish tacos (southern Cali style!) and these hit the spot!!! I would have given it a five, except I have made a couple KEY alterations: 1) substitute sour cream with Fat Free Plain Greek yougurt - it's 0 fat, but is much creamier than low fat or fat free sour cream. Less calories and a LOT more protein. 2) Made my own corn tortillas - SO EASY, and SOOOOO worth it. Store bought corn tortillas cannot compare. Just buy Corn Masa in the Mexican food section of your grocery. Mix with water and throw on a iron skillet for a quick minute each side. These really make the meal. We love the maranade and the sauce though - we have this AT LEAST once a week and have impressed our friends - and even my personal trainer! (But the Greek Yogurt is key there!) Try it, you won't be disappointed!!!

Chocolate Marshmallow Frosting

Colossal disappointment. Too runny and if you add more sugar all it tastes like is sugar. No marshmallow taste, which is what I was looking for. Ruined my cupcakes. Would NOT use again.

Hearty Multigrain Bread

We LOVE this bread. I make at least a loaf a week - we love it for breakfast - in the toaster with almond butter and it also makes an amazing sandwich! It's definitely our favorite weekly loaf.

English Muffin Bread

I made mine with 2 cups whole wheat flour as some others suggested - very good - tastes like the whole wheat English Muffins! I also only had one loaf pan, so did one loaf and 12 muffins. Muffins are ok, but the loaf is definitely better. Without being toasted, the bread is a little chewy, and the muffins are harder to toast. Very good flavor though!

Amazingly Easy Irish Soda Bread

I made mine with 2 cups whole wheat flour and two cups white flour, for added flavor and nutrition. The whole wheat flour was quite dense, so I added a little extra buttermilk - came out amazing! The loaf was so pretty, we didn't want to break in to it! But once we did, we were glad - so yummy! Perfect with soups or with a little butter for breakfast!

Split Pea Soup

The recipe as-is turns out much to thick. Added extra water during the cooking process, and still had to thin it out with broth for reheats. Left out the potato (glad I did - too thick for potato!) and added some more seasonings. Only used 2 cups split peas and did the quick soak. Boiled the ham bone on it's own for an hour and a half on it's own as suggested by other reviewers - Flavor was REALLY delicious!

Johnny Marzzetti with Ground Venison

As is, the recipe is about 3 stars - very bland and much to dry. I added extra water during the stovetop process, plus some extra sauce before baking. I only baked about 20-30 minutes as it was already starting to dry out. Also added mushrooms, quite a bit of italian seasoning, some fresh crushed garlic, some onion powder and some red pepper flakes to kick up the flavor. Next time I think I might also use beef broth instead of water for added flavor. With the adjustments, was nearly 5 stars! And we called it "Bambi Marzzetti." LOL
