Mussels Mariniere
I love shellfish and this was simple (minus the time involved in processing the mussels) and flavorful, really allowing you to taste the mussels. The broth that resulted was excellent. They took longer to cook than expected, though, but perhaps that was more of a reflection on the mussels I used (?). Also wish there was a little more to the dish in general. Maybe I'll cook spinach or greens in with the mussels so that lovely liquid doesn't go to waste.

Scottish Shortbread IV
Very simple, very cost effective, very good timing as I needed a quick sweets recipe for quick gifts for a bunch of people and no time to go to the grocery and had everything I needed already on hand. When mixed just right and baked for just the right amount of time they are very buttery and crispy. I do suggest refrigerating for a short amount of time to help the dough stiffen a little before rolling out and cutting into shape to safeguard against spreading. Just remember to wrap tightly so no moisture is lost. Also stole one reviewer's suggestion to add confectioner's sugar to the flour when kneading. It does add nice extra touch of sweetness.

Bob's Bean Salad
Great source of nutrients and great, fresh taste to it. Especially good when you let it sit over night (hold the feta until serving though if you do). For the health conscientious you can leave out the salt and the sugar (not that there's much to begin with) and it still tastes excellent. Thank you for this recipe!
