Potato Chips

Tried it as soon as I read it. used parchment on big plate, sprayed parchment with olive oil in a spray can, then a spray on top of the chips. FANTASTIC! I've tried microwave chips before with "blah" results, but Jessica hit a grand slam with her simple recipe.

Super Sausage Gravy

thank you bob evans®! so simple; so good. people are starting to think i know how to cook because of this recipe. this is made for people who enjoy eating! i might fry some onions with the sausage next time i make it, or maybe try a hot italian sausage sometime. this recipe belongs in the number one spot in every recipe box until you've memorized it like i have.

Grilled Cauliflower

no grill, so i used my iron griddle, but this recipe got me started on grilled/fried cauliflower. first i just fried it in olive oil, and that was great. then added diced garlic, and it was even better. now i'm making it with shredded romano on top for the last 3 or 4 minutes. i never did get around to using the brown sugar—i'm diabetic. this is a perfect entree for me, and i love it. even the "not-that-fond-of-cauliflower wife likes it. if you like cauliflower even a little, you should try this.

Spinach and Tortellini Salad

makes people think i know how to cook! didn't have cherry tomatoes, so we diced some big ones. fresh spinach because that's what we had. 50/50 parm and romano for the same reason. this was a treat for my wife because i don't think much of spinach, but i loved it just as much as her—i mean as much as she did. this goes into the "keeper" file. thanks, allrecipes!

Grandmother's Buttermilk Cornbread

this recipe makes people think i'm an excellent cook! since i use a 12" skillet for this, i always double the recipe. if i'm low on butter, i sometimes use lard in place of some or all of the butter, but the butter makes it taste better. at my wife's request, i once added cinnamon and what i consideted to be too much nutmeg. i hated it, but it was her birthday, and that's how she wanted it. next i want to try it with a can of creamed corn, and then with some cheddar chese and a few jalapeños. it's the first recipe i've used successfully—i only began cooking about 6 months ago.
