Donut Muffins

It was definitely easy to make and good. Mine were a little dry and that might have been because I brushed the top with butter, but did not dunk in the whole muffin in the butter as some reviewers said it made it soggy then and hard to keep in one piece. I left out the nutmeg and put in cinnamon because I did not have nutmeg. I used my 24 mini muffin pan and while I doubled the recipe, I only got 24 plus a bit more batter left for maybe 4 more which I did not make. I don't know why this happened. The size of my muffins looked like ones people posted, so not sure why I did not get 48. That is a huge difference and I double checked to make sure I did, in fact, double recipe and I did. I am not sure if I will make these again because as I said, they are kind of dry, but to be fair, I should make them again and roll the entire muffin in butter as it says.

Mom's Zucchini Bread

I thought the taste of this bread was outstanding. The only change I made was to cut the sugar back to 2 cups. While the taste was outstanding, I found it to be a bit on the dry side. It baked all the way through, was not in the least bit burnt, was baked on recommended temp, but was still on the dry side. My husband loved it but he also puts butter on his and I do not.

Easy Banana Bread

I did not think this bread was the best that I have made. However, I prefer a much denser bread and this was more cake like. I cut the sugar down to 2 C and did 1/2 white and 1/2 brown sugar and it was still too sweet for our tastes. I took many suggestions on this site and used 1/2 butter and 1/2 veg oil. Added some cinnamon/sugar to bottom of pan and they just popped right out. They did rise very nicely and baked nice although a bit too brown for our liking as well. I don't like the bread to be really dark on sides and bottom and this was because it took that long to get done. I can't say that I would make this again only because I have other recipes that are more dense that I much prefer. It is very moist and cake like if that is what you prefer.

Rolled Dumplings

I followed the recipe exactly, but it was so hard to roll them out. My dough was very hard and crumbly. While mixing it, I could barely get it to hold together. I added about 1 more tblsp of milk and still almost impossible to roll. I must have done something wrong, but not sure what. I rolled them as best I could, added them to boiling stock and they turned out kind of gummy. I made them based on all the excellent reviews, so I must have done something wrong.

Best Spanish Rice

I made this because of all the rave reviews, but I think it lacked a LOT of flavor. I did add one extra Cup of broth per other reviewers suggestions of not enough liquid. My rice got perfectly done, was moist and looked good, but tasted bland. I used ChiChi Salsa as I do in all recipes calling for salsa. I cannot say I would make it again. Lacks a great deal in flavor. My sister makes great Spanish rice and I know she adds some brown sugar to eat, but I don't know the rest of the recipe. I will ask for hers and make hers going forward. Sorry for the mediocre review, but it just was not the best Spanish rice I have had.

Grandma Johnson's Scones

These really are excellent. Everyone in my family loved them. I did follow the suggestion of the first reviewer in using 3/4 cup butter and just mixing in softened butter with sugar. The only thing I found in mine is that they baked much longer than the `12-15 minutes. More like 25 min and I even cut them smaller than suggested. My family is already asking me to make them again. I used choc chips in mine and also brushed them with milk and sprinkled sugar on them before baking.

Grandma's Sloppy Joes

I always use a can of tomato soup in my sloppy joe recipe. It adds sweetness and is not 'ketchupy' then. I did make it (minus cloves), but subsituted the soup for the full cup of ketchup and added only about 2 tbsp of ketchup.

Russian Tea Cakes I

I thought these were good, but frankly tasted like all the other Russian tea cakes I have made. The way the reviews sounded, it was like these were better than every other recipe. My husband loves Russian tea cakes and these were just as good, not better, than other recipes here. I have no problem with crumbling, mixing or anything else.

Pioneer Cut Dumplings from the 1800's

I was looking for a dense dumpling recipe and while these were dense, they tasted very doughy to me like it had too much flour or maybe I did not roll it right. I made the dumplings, not the noodles. I boiled them in chicken broth for about 10 minutes. They all floated to the top and looked great, but like I said, tasted 'floury'. I followed the recipe exactly, but I did take the advice of one reviewer and placed the dumplings in boiling water right after cutting. Maybe I should have let the dumplings dry too. Not sure. Had I made the noodles, I would have let those dry as recommended.

Grandma's Polish Perogies

I have tried several perogie dough recipes and none of them beat this one. It is absolutely the best. We like our dough a bit thick and so I cut them out and fill them on the thick side. It is easy to work with and comes out great every single time. I do have to work the dough a lot with my hands after I mix all the wet ingredients in the flour, but it comes out soft and pliable. It is important to let it sit for the 15-20 min, and keep the dough you are not using covered until you are ready to roll it. I roll 1/4 of the dough at a time. If you like a sweet cheese filling, try 32 oz Ricotta cheese, 1 beaten egg and 3 Tablespoons white sugar. Mix well with fork and fill perogies and boil. Excellent. I make these cheese ones and also some potato/onion ones. I don't add cheese to my potato ones. I simply sautee lots of onions in veg oil and add them to my mashed potatoes, mix with fork and fill perogies. My family loves them.
