Grilled Bison Burgers

I have replaced ground beef in my rotation with bison. Most of the time thought I make it into meat sauce, because there's so little fat that you can't make a meatloaf and/or a burger. This recipe called for the addition of an egg and Panko. Couldn't find Panko in the pantry so I use an equal amount of Matzoh Meal; which has no seasoning in it an I left out the hot sauce. They were delicious and I made them on my grill pan following the rest of the directions. Thank for submitting this. I've saved it to my recipe box.

Authentic German Potato Salad

Best potato salad I have ever made. Husband and daughter loved it. So easy. Used only 2 pcs of bacon and added them while everything was in the frying pan, so the bacon didn't have the crunch; but hubby has congestive heart failure so the bacon needs to be less than most recipes. He asked me to make it again and told me what he might also want to have it with. Thanks for posting this.

Teriyaki Flank Steak

Made a flank steak for dinner on Friday night and had half of it left over. Made this marinade for the rest of the steak using Amino's, instead of soy for health issues; used all the other ingredients and sautéed the steak on a non-stick pan. Hubby loved it and so did I. Next time I'll try this with chicken or pork. Great recipe.

Lemony Salmon Burgers

Thanks for posting a recipe with fresh salmon. My husband loves canned salmon and I've tried a similar recipe, but I loved this one. Used an onion, because I didn't have scallions and added some additional seasonings, plus a bunch of fresh herbs. Sautéed in some olive oil and I thought it was great. Hubby wants canned salmon, but I'll use this more often and buy the canned salmon for him. Great recipe. So easy and light.

Low Carb Zucchini Pancakes

Sorry, just made these. I have one large, flat pancake. Couldn't get the to become individual pancakes. Too much liquid. Drained in frig or an hour, but still too moist. Even tried some corn flour to dry to dry it out, but no luck.

Roasted Pork, Fennel, and Onions

Made this tonight using a peppercorn pork tenderloin, so didn't need to overdo the pepper; added the cumin and some fresh oregano and chopped fresh sage to the roast. Yummy. Never made fennel before, but made it in a baking dish/sauté pan with all the ingredients and included 1 shallot and 1/2 Vidalia onion. Made a gravy on top of the stove with all the juices and about a tsp of Dijon mustard and the balance of the fresh sage and the fennel fronds. Looks like dill, my favorite herb. Hubby liked the fennel; he's a fan of licorice, so it was a success. Will make it again. Tks for a great, easy recipe.

Turkish Red Lentil Soup with Mint

Made this recipe for a friend that needed it to be Kosher, so I used vegetarian broth; at the same time I made it with chicken broth. Didn't have bulgar, but used brown rice and red lentils and everything else except cayenne. Had fresh mint so used that. Pureed the soup and it is wonderful. So happy to be able to provide my friend with a hearty bowl of soup. Thanks for posting this. Would enjoy making it again with the bulgar.

Warm Dijon Potato Salad

Had all the ingredients in my cupboard and made this tonight. Elected not t use cayenne because hubby doesn't like it too spicy. The sauce was incredible and we both enjoyed it warm. Will take it for lunch tomorrow; probably just as good cold. Thanks for this recipe.

Spicy Orange Zest Beef

Tried this tonight because I had all the ingredients in the house. Very easy and having the video is great. I had frozen some orange zest and defrosted it, along with sliced frozen orange slices. Added some broccoli that I had cooked the other night. The flavor was excellent and I was glad not to use oil and sugar. Thanks.

Authentic Pad Thai

My husband and I have had this from a mix, but this time I had almost all the ingredients and so I tried it. Because I can't use sugar, I used Splenda as a substitute. Also, I didn't have rice noodles, so I used spaghetti and cooked it 10 minutes before adding it to the wok. We absolutely LOVED it! I watched the video first and then made the dish. I will attempt more Thai food in the future, because my husband was just thrilled. Thank you.

Stromboli

Made this using 1 lb ground chicken, instead of beef. Did not have pepperoni, so didn't put anything on the dough. 30 minutes made the bottom burn on the 2 stromboli's that I made. I think 350 degrees for 20 minutes would have one it. Used 1/2 of a large can of whole peeled tomatoes, some mushrooms and onion. Added garlic to the veggies and it was delicious. Hubby liked itand we have enough leftovers for 2 more lunches. Happened to have 2 pizze dough crusts in frig that needed to be used. Thanks for the recipe.

Pomegranate Molasses

Made this following the recipe exactly and put them over chicken meatballs from another site. The only issue I had was that it seized up after it was done and I was unable to save it for another day. The flavor was great. I think next time I would just keep it warm so that it doesn't seize. Otherwise, it was great.

Cooked Pumpkin

One of the farms in our area had 3 sugar pumpkins laying on the ground, for free. I picked them up the week of Thanksgiving and roasted them per some of the other reviewers. Have 3 large bags of frozen pumpkin in the freezer and will be making a pumpkin bread and chocolate chip/pumpkin loaf for my family to enjoy. Simple. I even gave the pumpking seeds to my daughter for her family.

French Onion Soup with Homemade Beef Stock

With my own beef stock from roasted marrow bones, this was so well worth the time and effort. My family loved it and so did I. The leftovers were just great and we're keeping this in our file for a future dinner.

Nana's Beef Stroganoff

I picked up a small sirloin steak but it wasn't enough for the two of us. I let it tenderize a couple of days before making this and used all of the ingredients. I even used my own homemade beef stock. Becaue the meat was tender to begin with, this only took about 2 hours on a very low flame. My husband and I inhaled it and there was only a small portion left. Only two things I changed were 1 tblsp of tubed tomato paste and 1 tblsp of ketchup and about 2 tsps of dijon mustard before simmering it. Didn't need the wine, because the stock had wine in it. This was fab and we'll keep this recipe to make it again. Thanks for posting.

Passover Choco-Nut Mandel Bread

I know that mandel bread is traditional on Passover, but I made this this morning for our Rosh Hoshanah celebration tomorrow. My first time making it, but I've always loved it. Followed the recipe exactly except for sugar. Used splenda instead due to dietary restrictions; also used flour and corn starch because it's not Passover. These are great. I did slice them and put them back in the oven with the oven off for 10 minutes, because I know they usually are baked twice. Great recipe. Will go into my rotation, provided the rest of the family loves them as much as hubby and I. Happy New Year!

Connie's Zucchini "Crab" Cakes

Made this last night. Added 1/2 white potato and a 1/2 of carrot shredded along with the mixture. Had drained it in a collander for at least one hour and then put in the fridge. Continued to pull the liquid out before making the patties. Used some other's advice about baking them. Put them on parchment in a preheated 400 degree oven for 13 minutes on each side. When I went to turn them I sprayed them with olive oil in my "misto". Should have sprayed them on the first side. They were delicious. 4 small zucchini yielded 11 cakes about 2" in diameter. Added one egg, one cup of my homemade whole wheat breadcrumbs and about 1/4 cup of panko, salt, pepper, garlic powder, dash of ground mustard. Great dinner. Thanks

Delicious Ranch Dressing

Made this basically the same as usual, but having never used buttermilk in a salad dressing before, I wanted to try this. It was great. I added a combo of fresh basil, tarragon, parsley and dill and added a dash of horseradish and some tubed cilantro. I added this to shrimp, crabmeat, pasta, cucumber and tomatoes. Delish!
