Tasty Baked Mac n Cheese

I used half and half instead of regular milk to make it creamier(1 1/4 cups). I added 1/4 cup of mozzarella and Parmesan to the main mixture too. and sprinkled the bottom of baking dish and the top of the mixture with parmesan. Cover with foil when baking to prevent from drying out.

Apple Crumb Pie

I modified this recipe, and loved it. *my pie dish was 8.25 inches. Filling- 5 cups of Granny Smith Apples, 1/4 Cup of Truvia (White Sugar), 2 Tablespoons Flour, 1/2 teaspoon Cinnamon, 1/8 teaspoon Nutmeg Topping- 1 cup flour, 3/4 cup brown sugar, 5 Tablespoons Butter

Spiced Pumpkin Seeds

Using two cups of Pumpkin seeds -Double everything except the butter -300 degrees for 1.5 hrs. (varies depending upon how deep your pan is) -stir seeds every 15 mins (the juice will evaporate so watch closely after that), and rotate the pan every 30 min. -I used minced garlic and added a little more salt since I did not have garlic salt. Good!

The Best Lemon Bars

For the crust 1/2 the amounts= butter to 1/2 cup and flour 1 cup instead of 2, Double the lemon filling = 4 lemons (add lemon zest as well) and 8 eggs (all sugar amounts stay the same if you use truvia sugar, flour in the filling stays the same), USE A 9 x 12 pan to get proportions of filling to crust right.

Quinoa with Peas

I added Italian Seasoning (Food lion has a generic shaker of a blend of common spices- included Marjoram, thyme, rosemary, savory, sage, oregano, and basil ). I also used grated parmesan cheese instead of Romano cheese. Good!

Best Chocolate Chip Cookies

I made the full recipe, and then split the batter into two halves. In one half I added chocolate chips, in the other half I added Peanut butter---so when I baked the whole recipe I had two different types of cookies: chocolate chip and peanut butter. This recipe makes a great base for cookies!

Cottage Meatloaf

Great tasting meatloaf, by far the best one I've made taste wise. However, the recipe is a little watery, so I would decrease the juice parts---I used tomato sauce instead of juice, and it was still too 'wet', so less of that. I also lined the bottom of the pan with 2 cans of whole tomatoes that I sliced in half, which made it nice =)

Chicken Stir-Fry

Great recipe, just a few modifications: - DO NOT ADD WATER or bouillon granules this makes it soupy--only cook in light olive oil--not too much or it gets greasy and runny - Nor garlic powder -Coat Chicken with Cornstrach AFTER you have marinated it in soy sauce, ginger, and chopped onions--this holds the chicken together when you cook it in the pan -add brown sugar to the vegtables to sweeten them a little (I added a green Bell pepper to my veg. mix too), and add ginger to the vegtables and a little soy sauce when they are being cooked in light olive oil - I like my stir fry on the dryer side with the vegatables crisp and not bubbly and soupy others like it other ways--this is best to me

Crunchy Oven Fried Tilapia

I didn't think it was bland, I used Old Bay though instead of salt and pepper in both bread dips (flour mixture, and a little in the cornmeal/bread crumbs). Good served with lemon juice as a topping.

Apple Butter Pork Loin

I cooked this before and it was great, but I made a few changes and made it better................................................................................... --When marinating the meat I added a dry pork rub with a little spice, a little Worcestershire sauce to tenderize, liquid smoke, 1/2 the amount of apple butter with barbecue sauce rather than excess apple butter............................................................................................... ---Then I used real apples instead of the mushy sauce ( I used a Gala apple--its naturally sweet and crisp--and does well in a crock pot) ,red potatoes, and carrots to absorb some of the flavor from the brown sugar, cinnamon and cloves (I used what the recipe originally called for). The real apples tasted like spiced apples with the meat, and the potatoes and carrots complimented it very well!!! Husband loved it, even more this time!

Lemon Pepper Chicken II

I did not care for this recipe. The chicken was so sweet--I only let it marinade for 30 mins even, it was like lemonade which meat chunks. My husband, one of my best friends, and myself, ended up just eating the sides as our main dish...how disappointing!
