Awesome Sausage, Apple and Cranberry Stuffing

My husband loved this so much. I used Maple Pork Sausage and it gave the whole stuffing a nice sweet flavor. It was really good stuffing. I made it outside the bird and baked it covered for about 30 minutes with the last 10 minutes uncovered to brown the top a bit.Next time I'll add more liquid to make it a bit moister.

Coconut Curry Tofu

This is a great dish and very exotic tasting....couldn't get any better even in a restaurant. The tofu can be left out or even substituted with a different type of protein source (chicken...etc.) The flavors are so amazing together. I will make this recipe again and again.

Charline's Sweet Potato Casserole

This recipe was very, very sweet. I like that but others at the table thought it was a bit too sweet. It tasted similar to a cinnamon roll but it was a little too liquidy. No problem, I just drained it out a little before serving. I loved the flavor of the coconut, cinnamon and spices. Very delicious.

Restaurant-Style Potato Skins

Great recipe. I would recommend adding some salt, pepper and other spices to the skins after frying. That would add some more zest to these great skins. I topped mine with chives as well. Taste great!

Creamy Celery Casserole

Who would want to be caught dead making celery for dinner. What's for dinner? Celery casserole.....LOL! My family would run out the door. Well, but I have leftover celery all the time and never know what to do with it. I thought I'd try this recipe and found it to be really tasty. When my husband heard what it was made of it shocked him but he still thought it tastes great. Who would've thought....? I really have to say, I'll be making this again and again. What a pleasant surprise!

White Chocolate Cheesecake with White Chocolate Brandy Sauce

The cheesecake was truly delicious but I had trouble with the baking time. I had to bake it for an addiional 20 minutes and it still didn't set entirely. It tastes very good though.

Ann's Shrimp Etouffee

We are huge Etouffee fans here. This recipe was very hot but not very flavorful. I changed it a bit to make it more appealing to my taste. I used chicken broth instead of water, added a dash of cajun seasoning, worcestershire and a bit of parsley and tomato paste (to give it some color). When the whole thing was cooked I thickened it a bit more with some cornstarch in white wine (gave it a nice finished touch) I ended up with a traditional tasting true New Orleans style Shrimp toufee. Delicious!

Honey Pancake Puff

this was interesting. It had the consistency of a cheesecake but the taste of a pancake. It throws off your tastebuds when you expect the sweetness of a cheesecake though. Still, a very good pancake

Egg-Free Low-Fat Oatmeal Cookies

These cookies were very easy to make but tasted very gooey and floury compared to your average oatmeal raisin cookie. I have to admit, for a healthy treat they're not so bad.
