Fruity Curry Chicken Salad

This was awesome! I recommend using a Fuji apple, it's crunchier. I didn't use grapes, but I doubled the raisins and the nuts.

Southern Candied Sweet Potatoes

My search is over!!! These are just like the ones my grandmother would make!! I tried to make these last year with yams and they were very stringy and un-enjoyable. This year I found sweet potatoes. My grandmother always made them so they were hard around the edges (I don't know if she fried them 1st) but it was sooo good. I used 1 cup of brown sugar and 1 cup of white. I doubled the spices and cut the sweet potatoes in inch size pieces because it's more heart warming and pleasant if you take the time to cut them. No one wants a big bulky potato in their mouth. This dish tasted even better 5 days later!

Pico de Gallo Chicken Quesadillas

OMG me & my husband nearly slapped each other because this was so good. We actually had to use corn tortillas, that was all we had and we heated the meal in the oven instead of stove top.

Sopapilla Cheesecake Pie

I made this a few months ago! I don't know what made me try it, maybe because it was simple and I wanted something sweet. It's hard to believe that you can make a 5 star dessert at home!!! This was amazing. My husband and I ate it cooled down out of the oven, I put it in the fridge to preserve it and I decided to take a bite, and OMG it was even better cold. So PLEASE eat this cold :)

Fiery Fish Tacos with Crunchy Corn Salsa

This was soooo good! I only had dried cilantro and I only used 2 tsp of cayenne pepper & it was still very spicy. I did find the Jicama at Walmart superstore and this with the lime juice is what really sets this off! I ALWAYS deepfry my corn tortillas in olive oil, I can't eat them just warmed up! So it was cruncy & mind blowing! I ran out of Tilapia and used catfish, it was still great!

Sloppy Joes II

I grew eating Sloppy Joe's and the way my mom made it (with chunky carrot, Spaghetti sauce) I hated it!!!!! I wanted to try something different & give this one 5 stars because it tastes even better after the day it was made... I tripled the recipe and added about 1/4cup of brown sugar plus the instant oats as recommended :)

Classic Caramel Apples

1st of all, I am honored to be the 1st to rate this recipe! It had a picture perfect photo with extreemly easy directions & simple ingredients. I questioned whether mine would turn out as shiny as the apples in the photo.....But it came out exaaaaaactly like the ones in the photo! I used 3 Large Fuji apples (because they're firm & crunchy especially for chicken salads). The caramel had a perfect texture to sink your teeth into, but also was firm (not too messy/gooey or sticky when set). Next time I will get 2 bags of carmel & put it all in a slow-cooker w/ those plastic slow-cooker disposable liners; dip the apples right in the slow-cooker & toss the liner out "no mess to clean up!"I have a talkative 3yr old & a busy 2yr old with Autism...right now it's 11pm and this was such a PERFECT late night treat for me...as busy mother!!! Thank You

Chicken Noodle Casserole I

When u add the seasonings garlic/onion/thyme/ fresh or dried & add the mixed veggies This is definately a 5-star recipe. Even without the veggies it's a 5 star dish.... we know this is not a chicken pot pie recipe :) but everyone likes to add their 2 cents, but it's still good as is
