Spiced Banana Cake

This was so delicious. The texture of this cake is a winner. The only changes I made: I used 1/2c white sugar, 1/2c brown sugar (due to having 3 VERY ripe/sweet bananas). And instead of the 1 1/4 tsp allspice, I used 1tsp allspice & 1/4tsp cinnamon. I mixed in the bananas, eggs, and sour cream into the wet mixture before adding it all to the dry mixture. Worked great. Was made in my bundt pan and added in chia seeds for a bit of some omega's.

Blueberry Gingerbread

Amazing. Whoever commented that it was dry, is so off. This was amazingly moist and held together beautifully. Even more moist at a day old. I put 3/4 tsp ginger instead of 1/2, and didn't have the buttermilk so added a tsp of lemon juice to milk like another person advised. I will be making this again and again.

Homemade Black Bean Veggie Burgers

This was a great meal! Doubled the recipe and froze the patties carefully wrapped in cling-wrap. Added parsley, salt, more hot sauce, worstershire sauce, liquid smoke, chai seeds, and cut back on the cumin as recommended. Even my toddler ate it!

Blue Cheese Garlic Sweet Corn

This dish is absolutely fabulous! The way the cheese and corn meld together is amazing. I used 3 cans of corn instead of cobs. I will be making this again and again.

Golden Yam Brownies

DELICIOUS! Family loved it, including my toddler. Husband called it a healthy bread pudding. I omitted the white sugar altogether.. as the potatoes were already sweet. Only used 1 egg and 1 egg white instead of 4. Added 1/2tsp of cinnamon to the batter before baking, and another 1/2 tsp to the glaze topping. I think the cinnamon really made it flavorful. Was worried when I poured it into the 9x13 dish that I either had too little batter, or too big of a dish, but in the end I loved how the bars weren't thick. So if you want thicker bars, use a smaller dish. I did glaze while warm and the batter absorbed it beautifully. But I did wait for it to cool before cutting and they cut into perfect little bars. Will be making again and again.

Creamy Avocado Pesto - Delish!

This recipe gets a big fat FIVE STARS. Absolutely delicious. I don't think I will ever, ever buy pesto from the store again... it just will not compare. I did not have Romano cheese, so used Parmesan. YUM! I did double the recipe and used a whole pound of shrimp. WONDERFUL! Thank you!

Best Ever Blueberry Cobbler

The Best Oatmeal Cookies

This recipe is absolutely AMAZING. Instead of raisins, I used dried cherries, and left out the nuts. A+++!!!!! Very moist, very soft, melt in your mouth goodness. Thank you!
