Easy Mexican Casserole

I have made this recipe several times and really enjoy it. I follow Jennifer's advice (she is the second review, from December 30, 2006) and add extra seasoning. Tonight I added half an onion, a jalapeno, and two cloves of garlic to the ground beef. Along with hot salsa, it had an extra spicy kick. Also, I think bite-size Tostitos make the best first layer in this casserole. I used different chips this evening with unsatisfactory results.

Awesome Honey Pecan Pork Chops

Followed the recipe exactly. The pork loin chops were cooked perfectly--five minutes on each side on medium-high heat. They were perfect by themselves. I was disappointed with the honey sauce because it hardened as it cooled, and my husband thought the honey and pecan sauce was too sweet. I will try this again and follow other suggestions to add soy sauce, maybe a dash of beef or chicken broth, to the sauce to liquify it more.

Apple Brickle Dip

Everyone loves this dip! Friends specifically request that I bring this to parties and gatherings now.I use the Heath toffee pieces because I love milk chocolate, and I often buy bags of pre-sliced apples to cut down on the prep time.

Delicious Black Bean Burritos

A good burrito and a versatile recipe. I followed Lucy's review suggestions, adding cumin, cilantro, a can of green chilies, and a can of Rotel to the black bean mixture. Recipe was easy to put together, and I liked it.

Quick and Easy Vegetable Soup

Great vegetable soup. My husband loves onions and hates corn, so I sauteed a small onion in the stockpot as my first step. Then I used spicy Hot V-8, and it gave the soup a spicy kick. I also omitted the corn. For Salt, Pepper, and Creole Seasoning to taste, I used a half teaspoon, one-quarter teaspoon, and one teaspoon respectively. Delicious. I will be making this again.

Burrito Pie

My husband loved this! I placed all ingredients in a 9-inch round pan and almost had a mess in my oven. I will definitely buy extra tortillas and use two round pans next time. I followed other reviewers' suggestions, spread the refried beans on the tortilla and placed it face down on the meat mixture. Also, we like our food spicy, so I added 1/4 cup of chopped Hatch green chilies to the meat mixture. I am excited to make this casserole again very soon and experiment with other suggested variations, or I may just stick with the recipe as is. It was delicious.

Asparagus Pie

Delicious Ham and Potato Soup

I do not eat potato soup often, so readers can take the four stars with a grain of salt if they choose. I thought it was very good; my husband, who is not a soup person, only gave it a "hmm." I will certainly share this recipe because I think others would enjoy it. I did not follow this recipe exactly, though. 1) I sauteed the chopped onions in about a teaspoon of butter before placing them in the stockpot. 2) I used 1tsp of white pepper and added a few turns of fresh black pepper as well. 3) I used a cup of half and half, 1 cup milk. So much for low calories! I would make this soup again for lunches or when the hubby is out of town.

Cucumber Sandwich

I really enjoyed this sandwich! My husband, a meat lover, said he felt like he was eating a salad between two pieces of bread, nothing special. I tried bean sprouts since I could not find alfalfa, and I boiled the sprouts for one minute, adding the vinegar and olive oil to only the drained sprouts in an attempt to keep the sandwich from getting too soggy like other reviews had mentioned. The next day I took a sandwich for lunch and added a slice of Swiss cheese--delicious! We ate these sandwiches with a side of zucchini relish, a recipe I found on this site that was also very good.

Stir-Fried Shrimp with Snow Peas and Ginger

Followed the recipe exactly with two exceptions: only had low-sodium soy sauce on hand and used gin instead of rice wine. Served this on jasmine rice and topped the stir fry with a dash of sriracha. Really good.
