Low-Fat Macaroni and Cheese
The taste was good, but it really was dry and not creamy. Maybe it needs to bake for less time? I added a finely chopped shallot and the flavor was great, just not a creamy mac and cheese.

Quick Peanut Butter Cookies
ok - I changed this a lot....but it was really good! I used NATURAL peanut butter, without sugar and dark brown sugar (no white at all) and I added 1 teaspoon vanilla, and 1 cup of semi sweet Ghiradelli chocolate chips. REALLY good cookies and a little healthier than they were before!

Roasted Pork Loin
I placed roughly sliced onions the the bottom of the pan, using them to "prop up" the roast. I poured about 3/4 inch of chicken broth into the pan as well, with the onions. I served the onions with dinner. I skipped the wine step.
