Cake Mix Cookies IV

I used a 15.25 oz white cake mix and used melted butter instead of oil. I only used about 1/3 cup butter to compensate for the smaller size mix. I added a teaspoon each of vanilla and almond extracts. Instead of rolling balls (I didn't let the dough chill) I just used a spoon to scoop rounded tablespoons. I dipped the dough in powdered sugar before placing the ball-type shapes on the cookie sheet. I baked them for about 8 minutes and they turned out wonderful! Crunchy on the outside but soft on the inside. These are going to be dangerous...

Cream of Wheat Griddlecakes

These were definitely fantastic! I only made a few changes. I used regular cream of wheat because that's what I had on hand, I used brown sugar instead of white, and I used plain greek yogurt instead of sour cream - just because I didn't have any sour cream. But I was happy that the lighter alternative still tasted really good! At first I had trouble with them cooking too fast and burning, but after a few attempts I got the hang of it. All in all, definitely some of the best pancakes I ever had.

Classic Goulash

This was pretty good, but not awesome. Definitely too much italian seasoning. I made it exactly like the recipe calls for and it just seemed a bit heavy-handed. I tried it with and without parmesan on top and I definitely prefer it with. This recipe did make a ton and was considerably inexpensive to prepare considering how many servings you get out of it. It's something I may make again, but not for a while.

Balsamic Rosemary Tenderloin with Roasted Potatoes and Vegetables

This was really good, but the rub was a bit too intense (and I can handle flavor!). I'd reduce the amount of shallots, garlic and rosemary next time to ensure it doesn't overpower the pork. Still good though. :)

Creamy Risotto with Smoked Sausage Done Light

This was wonderful! I was a bit skeptical using evaporated milk instead of the usual cream, but it still tasted decadent and amazing. And the turkey sausage was a perfect addition. I wouldn't change a thing!

Pizza Pinwheels

Honestly, I was expecting these to be good, but not great. They really were fabulous! I followed advice from other reviewers and blended the cheese, pepperoni and sauce in a food processor. I also only split the dough into two rectangles. I sprinkled some seasonings (oregano, basil, garlic, onion powder) on the baking sheet before laying down the dough. Once rolled, I stuck the rolls in the freezer for about 1/2 hour and they cut extremely easily. I just wish I had sprayed the baking sheet with pam first because they tended to stick to the sheet. That's totally my own fault though. Seriously though, these are worth a try!

Absolutely Fabulous Greek/House Dressing

This is awesome! I made greek salad with cucumbers, cherry tomatoes, red onion, feta and kalamata olives and it was addicting with this dressing. I had read the reviews before making it so I decided to add a teaspoon of sugar to the mix to cut the sourness of the vinegar, but in retrospect I don't think it was really necessary. I used it as marinade tonight for chicken (mixed with white wine) and it's pretty awesome. Overall a pretty amazing (and easy) way to make your own dressing.
