Toscana Soup
Fantastic soup, we loved it. Followed the recipe pretty closely, though I added carrots and celery, a bit of savory and a tiny pinch of thyme. Instead of heavy cream I used a can of evaporated milk. Altogether a great soup, can't wait to serve it again.

Broiled Tilapia Parmesan
This was by far the best tilapia I've ever cooked myself. I did add some breadcrumbs, as others suggested, and light miracle whip gave it a nice tang. Parm-Reg added a bit of flavor, as did garlic powder, a tiny bit of cayenne, and some sweet paprika. The timing was perfect. Lovely flavor! This will become a regular in our rotation, definitely.

Christmas Breakfast Sausage Casserole
I’m giving this 5 stars, because the entire family just loved it, despite the fact that following the cooking instructions in the recipe made for an extremely burnt bottom to the casserole. Good thing we’d made extra! We just ate the top and middle. We doubled the recipe, and used half hot sausage and half regular, used half an half rather than the milk as others suggested, and Texas toast. I think this is going to become a tradition, it was so nice to have breakfast ready when we were all hungry, without any fuss!
