Love to eat and therefore love to cook! With all children grown and moved away, theres lots of time to persue all sorts of interesting hobbies. I used to own a telecommunications firm, but sold out in 2008. Now enjoying looking after my husband and my home and spending time on the beach.
My favorite things to cook
I love chicken and fish with white wine sauces. I love a roasted chicken, the aroma that eminates from the kitchen is irresistible. Sunday is meat day and during summer we grill steaks, but in the cooler months, we enjoy Roast Beef and Yorshire Pudding, done the authentic British way.
My favorite family cooking traditions
Our tradition is that we don't have one, we like to experiment with new things, new types of cooking and ethnic foods. I once took a Thai Culinary class in Thailand.
My cooking triumphs
I think I would have to say it was a cake I made from Southern Living. It was featured on the cover of the Annual Recipe Book, I forget which year. It was a 5 layer Red Velvet, frosted with a white frosting. Since it was Christmas I decorated it with fresh mint leaves and sugared raspberries. It was the most beautiful cake I've ever seen, and oh! it tasted very good too!
My cooking tragedies
I recently used a recipe from this website to slow cook a London Broil. It was so bad we had to throw it away and order in Thai food. Was it me or the recipe? We'll never know for sure!!

Baked Teriyaki Chicken
We cooked this last evening. I used boneless skinless thighs. I doubled the sauce recipe and I used about a one and a half inch piece of fresh ginger which I minced. I also doubled the garlic. Like other reviewers, I used 1/2 white sugar and 1/2 brown sugar. I cooked the sauce for a few minutes in a saucepan to blend all ingredients, then put half the sauce in a crockpot with the chicken thighs. I cooked it for 5 hours on high. It was watery, so I removed the chicken with a slotted spoon, served on top of brown rice with a side of stir fried vegetables. I ladled the remaining sauce (which was now very thick) on top of the chicken and garnished with chopped scallions. There was a lot of food on the serving plate and it was totally gone! This is probably the BEST teriyaki recipe I've ever had! My husband loved it! I'm a very picky eater, everything I eat has to be very flavorful and robust and the recipe really fit the bill! I think everyone would love this and you will never ever want bottled Terriyaki sauce again!

Merwin's Shrimp Gumbo
This recipe didn't work for me. It was extremely labor intensive, made a huge mess in the kitchen. Had the gumbo been sensational I wouldn't have minded the time or the mess. I think that frying the chicken and then using the grease to make the roux resulted in a very heavy tasting gumbo. I would not recommend this recipe to anyone nor will I make it again. Sorry!

Slow-Cooker Corned Beef and Cabbage
Since I'm of Irish Heritage, we always cook up corned beef and cabbage for St. Patricks Day. I've tried dozens of recipes and this one is the best of all. The only change I made was that I just poured in a whole 12 oz can of beer because I don't like to drink beer and I didn't want to let it go to waste! I also added alot of freshly ground pepper. Delicious!
