Blueberry Buckle

I've made this twice in last couple of weeks & plan to make it again tomorrow for Garden Club. (you know it must have been a hit). I reduced sugar for cake to about 1/2 cup, (I always reduce sugar in baked goods) flour to 1 1/2, added 1 tsp vanilla, coated fresh berries w/1 Tlbs flour. For topping reduced sugar to approx generous 1/3 c each brown & white. Even kids who don't like blueberry anything liked it.

Healing Cabbage Soup

Just made this for church soup sale. We have some great cooks & I think this soup will compare very well. Per other reviews, doubled the garlic & onions which added greatly to flavor, added a carrot, used chicken broth. part diced italian tomatoes & part Muir Glen canned whole tomatoes, which have much better tomato flavor & thicker juice/sauce. Also added extra basil. Add crusty roll & have souper healthy meal.

Iced Pumpkin Cookies

Soooo Good - soft & tasty, easy to make. I reduced sugar as I do in most cookie recipes, used 1/2 c white, 1/2 c light brown & added raisins. After starting recipe I realized I had only whipped butter (not to be used in baking), so I used 1/4 c whipped butter, 1/4 c applesauce, less than 1/4 oil, baked 15 min. they turned out fine.

Artichoke and Roasted Red Pepper Dip

I made this for New Year's Day party and it was a hit. Per other reviewers, I added 1 tsp garlic and red pepper flakes. I made sure to drain well, bumped colander in sink till no liquid came out, mine was not watery/oily at all and really looked pretty. (nothing like the picture with the recipe). People who tried it kept saying to other - "You have to try this, it is so delicious".

Baked Whole Cauliflower

It's Addictive - Makes it much easier to get my recommended servings of veggies. Per suggestion of others, broke into bite sized pieces, simmered in chicken broth,drizzled with melted butter, tossed Panko crumbs & bakeed per recipe. Even if some crumbs did fall off, they are mighty tasty.

Maple Salmon

This was too sweet for me also. My favorite simple salmon recipe is to spread with dijon mustard, sprinkle with dill & bake - I like savory vs sweet.

Chicken Breasts with Herb Basting Sauce

Was looking for a bone-in, healthy chicken recipe - Just made this-- it has such wonderful flavor - and is so juicy. I did use a little chicken broth for first basting but then juice came & used those. Will definitely keep this as a favorite.

Parmesan Broccoli Balls

Made these yesterday as test to see if I liked them well enough to take to family holiday party Served with garlic mayo. I liked them warm or cold. I used 1/2 amt of butter, 4 eggs (will try with 3 next time) & little extra stuffing & they were just fine to roll & bake. Plan to make to take to party tomorrow, so we'll see how they go.
