Slow Cooker Pot Roast

Wow, this was good! My husband loved it, too - we both had two plates! I enjoyed mine over mashed potatoes, and it was delicious. I was running behind today and actually cooked mine on high for 4 hours, and I think it turned out just fine. And, yes, it's salty, but we like salty. Bravo!

Chicken Enchiladas II

Great recipe. Just made it for my Bunco group, and they loved it. I did make a few alterations based on previous reviewers: - I used Campbell's Fiesta Nacho Cheese soup instead of cream of mushroom - I used corn tortillas instead of flour tortillas - I poached the chicken, shredded it, and seasoned it with Mrs. Dash Fiesta Lime seasoning. I served it with homemade Spanish rice and margaritas, and it was a hit! Enjoy!

Rich and Creamy Tomato Basil Soup

Very good! I had tomato basil soup for the first time at a nationally known hotel dining room and thought I should try to make it myself. This recipe tastes exactly like the hotel's "gourmet" soup.

Polish Meat and Potatoes

Turned out great the first time, kinda soggy the second time. I may try cooking the kielbasa separately as I cook the onions and potatoes rather than cooking them together for another full 15 minutes. Still, glad I found this recipe - quick, easy, hearty meal.

Cha Cha's White Chicken Chili

Flavorful chili, but HOT! I only used 1/2 tsp of cayenne pepper and it was still spicy. I needed some sour cream and a milk chaser, but I'm sure my husband will love it!

Dad's Leftover Turkey Pot Pie

Excellent! I made my first pot pie with this recipe trying to use up leftover turkey from Thanksgiving. My husband is a pot pie aficionado and he gave this a thumbs up! NOTE: the last couple times I made this recipe, I had enough filling for two pies. I may be doing something wrong, but it works out ok - leftovers!

Spanish Rice II

Every bit as good as the rice you get in a Mexican restaurant. I used my own peppers and tomatoes from my garden, which added a nice touch, I think. Yummy!!
