Delicious Gluten-Free Pancakes

WOW! These ARE delicious - tasted almost like crepes! I sub'd homemade almond milk for the water/buttermilk powder & just added a Tbsp of brown sugar instead of sugar substitute. FANTASTIC recipe that fooled the most anti-GF eater of our family! Thank-you SO MUCH for sharing this...it is a weekly treat for us now!

Chewy Coconut Bars

A million stars for this one!! It's been a huge hit wherever I take it - thanks! I used butter instead of shortening, less sugar, upped the coconut to 1 c and probably put more chocolate chips in cuz that's just what i do....I have also made it with spelt flour and it still tasted amazing! THANK-YOU so much for sharing this goldmine!!!

FANTASTIC soup! LOVED it - adored by all! I suggest doubling if you want this for a meal - the recipe as is was barely enough for 4 of us (2 kids, 2 adults)...so tasty & flavorful - thanks so much!

Brazilian Black Bean Stew

AWESOME! After reading the reviews of those who thought "how could this taste good?" (I was one!) I gave it a shot and am SO GLAD I did! I even had to run to the store (1/2 hour delay) for mangoes cuz mine were off...so I was in the "this BETTER be good!" mindframe by the time the meal was ready! It was a HUGE hit with the whole family, loved the "kick"...I omitted the ham & used some other kind of sausage (Anda..somethin'er'other). Great blend of flavors, if all food in Brazil is this good - it's on my list! Thanks for sharin!

Best Chocolate Chip Cookies

YUMMMM!!! I cut the sugar back to 1 1/2 C - only used brown sugar. Unfortunately I ran out of Chocolate Chips (TRAGEDY!) so I used 1 c chocolate chips & 1 c. white chocolate chunks (white chocolate is not REAL chocolate...so this was a disgrace...) the cookies turned out marvelous in spite of my chocolate tragedy...thanks!

Roast Sticky Chicken-Rotisserie Style

Out of this WORLD good! It took everything in me to NOT cover the chicken...and what a surprisingly juicy perfectly roasted chicken! I used 1 chicken almost 7 1/2 lb (organic, free range - yummm!) and it took 4 hours on convection roast to cook. Thank-you for sharing - that was awesome, a definite keeper!
