Twice Baked Potatoes I

Just wanted to comment on the statement's about the potatoes taking longer to bake. My mother gave me this tip. Get a "clean" carpenters nail, insert nail into unbaked potato, leave in and proceed to bake. It takes about half as long to bake with the nail in the potato then without it. :-)

Santa's Favorite Cake

This is a very good cake, would be really nice to take to a Christmas party. I have to agree with the previous post, 1 teaspoon of peppermint oil is more then enough! I used the 2 called for, and it's so strong it's bitter. I made this for my mom's birthday, she loves peppermint, but even she agreed that it's to strong. I honestly don't know how you could eat it being that strong. It overpowers the whole cake. I'm hoping that in a day or so, it will mellow out.

This took f-o-r-e-v-e-r to get to the 250 stage. And cutting them was hard too, then wrapping all those pieces individually. You definetly should have some help with at least the wrapping. They have a very nice flavor.

Cream Cheese Mints

These are the best peppermint patties you'll ever have. Their smooth, not grainy, like the boughten ones I've had. It doesn't matter what fancy store you buy yours from, these will beat any other, hands down. Their easy to make, fast and fun. I dipped them in melted chocolate and froze. Delish!

Date Nut Pinwheel Cookies II

These have a nice flavor, but what a pain in the butt to work with! This dough is VERY sticky. It stuck to the wax paper, it tore when I rolled it out, it tore when I "attempted" to roll it up, and it stuck to my "sharp" knife trying to slice it. I would strongly suggest, you lightly grease your wax paper, and let it chill in your "freezer" before slicing. Also, there wasn't enough filling for all three pieces, I could only fill two. What a nightmare!

J.P.'s Big Daddy Biscuits

These are exceptionally good. Very similar to my mom's "baking powder biscuits", but these are moister then hers. I made the "creamed chicken over biscuits" recipe from this site to go with these. My 16 month old son loved it, he said mmmmm and clapped his hands. I cut out 6, and didn't get "Grand Biscuit" size as stated. I also only needed to use 3/4 c. milk instead of 1 c.. My mom says that the barometer affects how your biscuits turn out, (works the same with anything with yeast, such as bread) so, if it's raining or very humid, they won't rise as well. If it's hot and dry, they should rise beautifully. So I kind of go by that when I am adding the liquid and flour (amounts). After you've made enough biscuits, you can tell how their going to turn out by how the (uncooked) dough looks and feels. I was thinking about the post that said they turned out dry on the outside and moist inside, if they seem very hard, then I would think possibly, they were cooked at too high a temp. and/or were left in too long. Because my oven is very hot, I always turn it down by 25 degrees, and never assume that the time stated is going to be "perfect" for my oven, so I checked these after 10 minutes, and then watched them 2 to 3 minutes after. Anyway, you should enjioy these.

Thanksgiving Corn Pudding

This is very very good! The only thing I would do different, is cut the amount of butter and sugar for the topping, it was kind of sweet for me. My mom loved it! I will be serving this more often then just Thanksgiving.

Mom's Ginger Snaps

Wow! Are these ever good! Truly, they are the best. Easy to make too. I followed the advice of the other posts, and doubled the spices, I also added a teaspoon of vanilla. I didn't have any cloves, and they still taste great! Yuuuuummmm!

Jiffy Cinnamon Rolls

These are very good. I didn't have any yeast on hand, and was glad to find this recipe. My oven bakes hot so I turned down the temp. by 25 degrees, and watched them every 10 minutes. They were done perfectly in 22 minutes. A bit sweet for me, so one did the trick. :-)

Spaghetti Sauce II

Wow is this ever good! A couple years ago I made spaghetti sauce, it was awful! It was so bad that I went back to the jar sauce. But tonight I was in the mood for spaghetti, and didn't have any jar sauce, and couldn't get to the store. So I took a chance and decided one more time to try this homemade sauce. Glad I did. It truly is the best spaghetti sauce I've ever had, better even then what I have had in restaurants. It has a hearty taste and fresh taste. It's kind of hard to describe, it's so good. I did have to make a couple adjustments. I didn't have a can of whole tomatoes, so I used tomato sauce instead, and I only had one can of tomato paste, but that turned out good since the sauce was plenty thick. I had to keep adding water to it as it cooked down, so it wouldn't get too thick. I also had lots more garlic and onions, and a dash of Worstershire sauce. If your a little apprehensive about trying homemade spaghetti sauce, try this one. It is delish!

This was really good, but it was way too sweet! I will make this again, but cut the sugar amount by at least half. I really like the sweet and sour chicken recipe from this site better, absolutely wonderful.

Spicy Vegetable Beef Soup

My husband is a soup fiend, so I made this. I have always HATED soup, but I tried this and was really surprised. It has the best flavor. I did add more garlic and onions, potato, and used beef boullion cubes since I didn't have the can broth. Also, I used the end of some beef I had on the bone, and added it right in with the beef as it simmered. I simmered it 3 hours prior so it would be tender. I really think doing that along with using the beef bone is what made it so delicious. My husband had 3 bowls! And my 15 month old even loved it.

Stuffed Shells II

I have to say this recipe was absolutely wonderful! I have only made stuffed shells maybe 3 or 4 times, and always just used spaghetti sauce. Because I have never like can tomatoes in anything I made, they always seem to overpower a dish, and all I taste is tomato. But this blew me away, oh so good! The only thing is I had half the sauce left over, could of easily used another box of shells. This was absolutely delish!

Creamy Peanut Butter Fudge

Very good. Turned out great. I saw the other post where someone said it was dry and crumbly, it was cooked too long. And the one that turned out grainy, it wasn't cooked long enough. Fudge recipes are touchy, you have to follow the instructions exactly. This fudge is good in that it isn't too sweet, has a good balance, and couldn't be any easier to make.

Italian Style Meatloaf I

This is excellent meatloaf! Truly the best I've ever had! I did add chopped and sauteed onions, garlic and leeks. I left the foil off as suggested by other posts, and it was done in an hour. Instead of putting my meatloaf in a loaf pan, I form it on a cookie sheet. Makes it much easier to cut into slices and remove. My family didn't think the herbs were overpowering as others said. I even used Italian seasoned bread crumbs. This is no ordinary meatloaf, it's superb!

Pork, Cashew, and Green Bean Stir-Fry

I was really surprised when I tasted this, it was soooooo bland! Even though I added a LOT of ginger andd garlic, more then what was called for. Good thing I had a bottle of stir fry sauce on hand, I added some of that to it, and it saved the dish. I didn't sprinkle the cashews on top as suggested, but stirred them into the stir fry last. After doing all that, it was good.

Cheesy Chicken Pot Pie

Excellent! I added more veggies, green beans, corn and potato. Next time I will add mushrooms and chopped, sauteed leeks. This was the best pot pie I've ever tasted.
