Quinoa and Black Bean Chili

This was really good and quick to make. Cooked the quinoa in chicken broth. I used green beans instead of zuccini and canned corn instead of frozen. To make it healthier, I used no salt added canned beans and veggies. I will be making this again :)

Thai Red Chicken Curry

Wow! This was really good! I was pleasantly surprised. Definitely authentic resturant quality. But, I made a few changes: I used sesame oil instead of olive oil, lightly salted and peppered the chicken, added 1 tablespoon of soy sauce, doubled the curry paste (I like it spicy) and added bamboo shoots for a really authentic touch. Served it over brown rice. Yummy!

Grilled Salmon I

This is so good and easy to make! I have made it several times and it has come out great each time. I prefer grilling, but it also cooks great in foil pakets in the oven. Great dish for entertaining.

Greek Pasta with Tomatoes and White Beans

Very good, but needed a few changes. Sauteed onion and garlic in olive oil. Then added tomatoes with a little bit of the juice and beans (i used garbonzo beans because that's what i had on hand). Seasoned with salt, pepper and italian seasoning. Added a teaspoon of sugar to balance the tomatoes. Overall, a good, quick, healthy dinner!

Glazed Salmon Fillet

Wow! This was really good. We definitely enjoyed this dish and will be making it again. I followed the recipe exactly and it came out really great. Next time I will try using fresh ginger instead because I prefer it to ground. Also, everything tastes better on the BBQ, I would highly recommend using it!

Carrot Cake II

This was so good! I only made a few changes: added 1 tbs oil, 1 cup of sugar and doubled the nutmeg and cloves. I also frosted it with a low fat cream chesse frosting. I will definitely be making this again.
