About this Cook
After having a couple of auto accidents with head injury a few years ago, I had to learn to cook all over again. I was able to get almost everything back (except German Chocolate cheese cake)and the family learned some along with me. Now I just cook for 2 and that is a pretty hard job, trying to adjust.
My favorite things to cook
I still like to fix spaghetti, from scratch, the first thing I cooked when I was about 12. My daugher and son will still tell me that is their favorite meal.
My favorite family cooking traditions
When I realized that it was important to teach your children to cook. After my first accident my husband took over in the kitchen and after couple of weeks, we had a family vote, and it was 4 to 0 for Lee to stop cooking. I was real upset with my mother-in-law for not teaching him anything, then I realized that I had had to chance to teach him for a lot longer than she had. When I got back on my feet, I started to have my son learn to do things in the kitchen, right along with me.(by the way, he is a stay at home dad and does all the food preparation at his house)
My cooking triumphs
I used to enter different things in the county fair and usually won some prize, but when I made Aunt Ruths cinnimon rolls and won the "Reserve Grand Champion" prize, I was surprised and delighted that someone else thought my cooking was okay.

Beef and Bean Chimichangas
This recipe was very good and very easy, just don't fill the tortillas too full. I made them with ground turkey (because of possible beef alergy) and they were sooo good.

Baked Seafood Au Gratin
I made this recipe last week, and as usual, I didn't have all the things called for, so I had to wing it on some things. I had some fake crab, and used it and it was very good, I did have shrimp, and the only fish I had was a can of tuna, and, sorry, I used that. It was really good, and even though I messed up and didn't follow the recipe just right, it was very forgiving and it turned out very good, oh yes I added a dash of wine. I can tell that by making it correctly it would be wonderful, so next time, I'll plan ahead and have the correct stuff on hand. Thanks Katy M, from Cathy L.

Easy Slow Cooker French Dip
I didn't have all the stuff for this recipe, so I had to sub fried onions (chopped) and beef broth, and I had to use some wine since I didn't have any beer, oh, well, it was fantastic anyway, thanks for the idea.
