Scalloped Potatoes II

I made these last night to go with our smoked pork chops. I probably shouldn't actually "review" the recipe as I made modifications based on what others said but I did use it as a base recipe as I have never made scalloped potatoes from scratch. Like others, I made a roux with 1/4 cup of butter (putting in one small chopped onion until translucent.) 1/4 cup flour with some garlic powder, onion powder and the salt and pepper. For the liquid, I used 3/4 cup chicken stock and about 3 cups of milk and let that all thicken. I then layered the potatoes and poured the sauce on the first layer adding a sprinkling of parmesan (the green can kind) and continued until done. I baked them at 425 for 15 minutes and then reduced the heat to 375 and baked for 45 more minutes. The potatoes were done and the top was somewhat browned and bubbly but next time, I will put them under the broiler for a minute or two to really brown them up. My family likes them a bit more "crusty" on top. They WERE good and my family did say they liked them a lot! I gave the four stars because I made the changes and the fact that I would have liked them more crusty on top.

Creamy Chicken and Wild Rice Soup

I made this soup the first time as written and LOVED it! I have made it several times since and have made a couple of changes and LOVE, LOVE, LOVE it still! The changes I made were to first, use only chicken stock (no water), I also saute about 3/4 of a cup each of onion, carrot and celery (I think those always make a soup better plus I like the color of the carrots!) while the stock and chicken are coming to a boil. Because of the addition of those three items, I did increase the chicken broth by one cup. This soup no matter how you make it is a sure fire winner!!!

Red Skinned Potato Salad

I was looking for a new potato salad to make for dinner tonight and stumbled on this one and due to the number of positive reviews, decided to try it. I made it as listed with only one small change...I had some fresh dill that I needed to use up so I threw some of that in. After I made it, I gave it the taste test and said "WOW!" to myself, put it in the fridge to meld the flavors and wait for dinner. My son and daughter in law were here and when they took their first bite, my son said "This is the BEST potato salad I have EVER eaten, and I am NOT kidding!" His wife said the same. And then there was my picky husband who said "This really IS the best potato salad I have ever eaten!" I think the bacon is the secret ingrediant...I have never put bacon in potato salad before. If you are looking for a potato salad that will "WOW" your guests or family, this will do it...I promise! :D

Chicken Pot Pie IX

Chicken Pot Pie has always been a favorite of mine but I have never attempted to make one myself...until now. If I had only one word to use to describe it, it would be WOW!!! This did not disappoint! I followed the recipe with the following additions...I added some of that new "Flavor Boost" from Swanson to my chicken broth and used a little Wondra to thicken the sauce up a bit (it probably would have thickened up but I was impatient). The only other comment I would make is it took longer to prepare than I thought it would but boy, was it worth it! I can't wait for lunch tomorrow! Mmmm.

Ranch Burgers

My husband is nothing if not a cheese burger man. He eats them several times a week and I am always looking for new ways to prepare them. This recipe gets 5 stars from my husband and 5 stars for me for finding the recipe! He LOVED them. Told me they were by FAR the best burgers he has EVER tasted! He told me to NEVER loose this recipe! I had enough for two that I froze so that he can have them some night when I have MY favorite...anything chicken! :)

Modenese Pork Chops

Was looking for a new recipe for pork chops and this really fit the bill for simplicity and taste! My husband even gave me a BIG "Mmmmm" when he took his first bite...which made me happy as he is a "Beef" man and only tolerates pork for me. I followed the recipe except I used a cup of the wine and in the last few minutes, I threw in a handful of sliced onion...for me, EVERYTHING is better with some onion! I will for sure be making this again!
