Brown Family's Favorite Pumpkin Pie

I added a spoonful (maybe 1-2 tablespoons) of Neufschatel cheese and cut the streudel to 1/4 the recipe but otherwise did this pretty much exactly according to the recipe. It was wonderful.

Fragrant Chicken Curry

I made this while on a family vacation with my in-laws and it went over very well! I omitted the cayenne (just didn't have any), added vegetables (for double recipe: several mushrooms, 3 stalks celery, 5 carrots, 2 very small potatoes, & 1 can peas though I would have preferred frozen), doubled the garlic, used 3 lb cubed boneless skinless (raw) chicken breasts instead of a rotisserie chicken, halved the chicken broth (low salt) and added several dried Turkish apricots (quartered). It was served over brown basmati rice and garnished with chopped fresh cilantro & peach salsa. Delicious!

Navy Bean Soup I

I substituted smoked turkey and used a quart of chicken (or vegetarian "no chicken" broth in place of boulion and part of the water, used fresh parsley (3-4T) and increased the vegetables (more celery, carrots and garlic and added a little bit of leftover cauliflower and red bell pepper) but otherwise basically followed the recipe and thought it was excellent! I garnished with fresh chopped parsley and chopped red bell pepper and served with corn bread. My husband praised it and even my toddler ate it!

Pork Chops with Tangy Honey Sauce

I made full recipe for 3 boneless chops. Added sm. chunk fresh ginger grated in. Added extra garlic. I was short honey by about 1TBSP.I marinated the chops directly in the baking dish, not in a plastic bag. Did bake at least 35 min. until meat was done and then longer to reduce sauce further. Very tasty--the fresh ginger really added a nice zing and it was plenty sweet. Good with squash.

Garlicky Quinoa and Garbanzo Bean Salad

4.5 stars if I could. I doubled the garlic, cut olive oil to 2 TBSP, and otherwise followed the recipe. It is excellent. Can't put my finger on what exactly would make it a "5" for me. I will try doubling the recipe next time!

Curried Quinoa Salad with Mango

I cut salt in half and probably could cut more. I added about 1/4 red bell pepper and one stalk celery ( both chopped). I used frozen mango partly thawed that thawed rest of way when I mixed it with the hot quinoa. Also added 1 clove fresh chopped garlic to the hot quinoa. It was very good right away and excellent cold for lunch for the next two days!

Slow Cooker Spicy Black-Eyed Peas

I made this recipe for a New Years Eve party and it was a big hit! I did make several changes to accomodate midwestern palates not accustomed to spice and friends who don't eat pork as well as adding collard greens for even more New Years luck (beans for coins, greens for bills I read) and carrots (personal preference) so I can't really rate original recipe but we really liked this version: Recipe alterations: I used 2 c water & 4 c veg broth, omitted boullion & cayenne, used smoked turkey for ham and turkey bacon instead of regular, omitted salt, used 1/2 gr bell pepper in place of jalapeno, added 4-5 carrots, and added 1 bunch collard greens 1-2 hrs before completion. I did soak beans overnight in 2 c water, then rinsed them and added just the 4 cups veg broth before starting the crockpot in the a.m. Cooked on low for first 6 hr but beans still hard so high for last 2 hr. Great!
