Cajun Crawfish and Shrimp Etouffe
good, although I use 1/4c butter and less flour to make the roux. The seafood seasoning is critical, I used Paul Prudhomme's.

Banana Cream Pie I
Mind Blowing. I made this pie for a finisher for Easter dinner (we make a big deal out of it in my family). I did modify however: cut sugar to 1/2 cup, substitute 3 tbs ground tapioca (this requires priming in the milk at room temperature for 5-10 min) for the flour/cornstarch, and substitute 1/3 cup of the whole milk for cream. I had thought about a rum syrup/glaze but this seemed decadent enough as it was. I used a simple crust of crushed graham crackers (14-16) and 1/2 stick (1/4 cup) butter-I added no sugar as this recipe is sweet enough as it is.

Cardamom Chicken with Salt and Pepper Crust
A quick and easy marinade. Works well with Chicken tenders (@350 degrees of course). I tend to go easy on the kosher salt, but that has to do with household preference.
