Pressure Cooker Beef Stew

Excellent, flavorful stew. I made it once as specified and the 2nd time made it for 12 servings but increased the vegetables instead of the beef and added a bay leaf. I need to eat more vegetables, lol. This recipe is especially good for those with electric pressure cookers (use the high setting) since no electric pressure cooker that I am aware of will go to 15 lbs of pressure as the stove-top models do. Regardless of the type of pressure cooker you use, just remember to not fill it over 2/3 full.

New Orleans Jambalaya

Now this is Jambalaya!!! I cut back a little on the chicken breasts and added some chicken gizzards and hearts for a little twist. Great Recipe Christine!!!

Stuffed Jalapeno Firecrackers

These are "da bomb". Jalepeno bacon isn't available in the small, rural town I live in so have made a couple of varients. The first is using peppered bacon with some extra freshly ground tellicherry peppercorns. With this one I also added a teaspoon of red pepper flakes (I like things really hot :-) ) to the cream cheese. The second varient was to use the brine from some jalepeno rings and I tried marinating the bacon strips in this. Between the two I preferred the first variation. I hope someday to find some jalepeno bacon so I can trie this exactly as the recipe is written.

Jiffy Jambalaya

I love spicy jambalaya and, even with substituting andouille sausage for the kielbasa, found it to be bland. Since it was such a good starter recipe I made it again but increased the hot pepper sauce to taste (1 1/2 t) added creole seasoning, black pepper, red pepper flakes (all to taste), and as another reviewer did, used regular long grain rice, adjusted the water, and prepared it in my pressure cooker to really infuse the flavors. I definately recommend this as a basic starter recipe or for someone that doesn't like much spice.
