Leftover Turkey Casserole

This was a really yummy way to use the leftover turkey. I had made the Herbed Corn recipe and used it as the vegetable. The family loved it!

Steak Stir-Fry

My family really liked this. I doubled the sauce and marinated the meat in Teryaki sauce for a couple of hours before cooking. I found it to be a little salty... maybe the teryaki but I am going to modify the recipe next time to use low sodium ingredients. Other than the saltiness, really yummy and easy to make.

Turkey 'n Stuffing Bake

This was really yummy. I made a few small variations. I used low fat/low sodium soup since my leftover stuffing was a little salty. Instead of peas, I used my leftover Herbed Corn that was a really good recipe from this site. As a final alternation, I added some cheddar cheese on the top, with the fried onions, for the last 5 minutes. We will definitely be making this again!

Heather's Blueberry Chicken Stir Fry

The flavor is great. The visuals are ridiculously unappealing. It ends up kind of a brownish purple. My husband had two helpings. He loved it. He just couldn't look at it.

Herbed Corn

This was really yummy and made a nice compliment to our Thanksgiving dinner. I used the frozen organic corn from Costco with no other modifications.
