Red Wine Cake
This was baked in two mini-Bundt pans. Since several reviewers noted the density or dryness of the cake, I increased the wine (Fairbanks Port, which I thought was too dry to be labeled Port) to 3/4 cup. With that and no chocolate chips [instead Ghirardelli sweet cocoa & chocolate and one Hershey's mini (chipped)], the cake tasted like a mild Spice cake. It was dry, just BLAND! NOT a hit at my office party. What was a hit was the chocolate frosting I made. So, now I have an unfrosted cake and 11 out of 16 slices of a frosted one. Total calories on the frosted cake for 16 slices was 232. Do I chuck it, experiment with the best way to eat the frosted or make a punch bowl cake for my church gathering on Saturday evening? This is REALLY disappointing, that something that people wouldn't even offer a review of, could cost so much to make!

Arroz con Pollo (Chicken and Rice)
Easy recipe. Next time I will punch up the flavor by adding extra Onion and Garlic Powder to the chicken. I used an unfamiliar brand of rice and like others, it came out mushy. I used 2.5 cups of water because I was using a large, whole tomato (adds fluid) and it was still too much fluid. I, also, used olives stuffed with pimiento (8) and cut them up; mixed the peas in after 10 mins of cooking and used 1/2 a red and green bell pepper. It'll be GREAT the next time!

Cuban Black Beans I
I used this recipe for New Year's and got rave reviews. I don't use the chile peppers or the vinegar. I sautee the garlic and onions first, when that is semi-translucent I add the meat (ham hocks, diced, off the bone). I use Goya black beans, strained. Add the bay leaf half way through and a bit of cilantro after that. Cook on a low fire until simmering and smelling the house up!
