Perfect Turkey

The stuffing was over saturated with liquids from the turkey. Aside from that--spectacular! Heated 15 degrees higher than recommended.

Tuna Pita Melts

I haven't eaten tuna in 4 years due to food poisoning from tuna fish. I thought I'd give this a try for my first attempt back to tuna and was glad I did! I followed the recipe, except omitted the salt. I sprinkled the tuna mixture with sea salt. I warmed the pitas on 400 F for 5 minutes as directed, then added the tuna mixture. I put the pitas back into the oven for 5 minutes, but the tuna was still not hot. I recommend 8 minutes in the oven to fully heat through.

Oatmeal Blueberry Muffins

Great flavor! I used whole oats, instead of the quick oats. I found this added a little more texture. I read another reviewer that mentioned soaking the oats in the milk while mixing all of the ingredients. I will try that next time to see what affect that has on whole oats. I also used 1/3 cup of brown sugar instead of the white sugar and doubled the amount of blueberries to 2 cups. Finally, I added 1 tablespoon of cinnamon and 1 Tbsp of vanilla. This really seemed to make the muffins pop. My husband wasn't particularly thrilled with these, but that's probably b/c they are healthy--no fault of the recipe!

Fluffy Scrambled Eggs

Great recipe! I inadvertently had to double the recipe, as I grabbed a 12 oz can of evaporated milk (instead of the 5 oz listed). With the 12 oz can, I ended up using 17 eggs. Since there are only two of us in our house, we will be eating a ton of scrambled eggs for awhile! (Good thing they taste great!).

Lemon Delight

Childhood all-time favorite! My grandmother used to make this for me on my birthday every year. Her original recipe did not include sour cream, but it only adds to the moistness of the cake. This is almost an heirloom recipe because of the multitude of compliments and cherished memories I have of it!

Black Bean and Corn Quesadillas

First time making quesadillas. used a black bean, hamburger, onion, and corn combination. Added salsa and sour cream to above combination towards the end. Cooked a flour tortilla in a second pan, melting the cheese first, then scooping up the bean mixture. Added some cilantro and topped with second tortilla shell. Worked great!

Sopapilla Cheesecake Pie

Made as directed. Had to adjust cooking time. I gauged this by gently shaking the pan to see if the cream cheese had started to set. This varies for me, but typically results in an additional 10 minutes of cooking time. Note: I live in the mountains in Utah, so higher elevation considerations. Aside from that, I reduced the amount of sugar that gets dotted with cinnamon on top of the cheesecake pie to 1/2 cup versus 3/4 cup. This dish is sweet enough as it is! Be prepared to have this recipe printed out, because you will be asked for it!

Sweet Corn Bread

The husband said that this was the best cornbread ever. I tried the recipe as directed, except I didn't have any sour cream. So, I substituted vanilla yogurt. The consistency was good--not too gritty. I will try it next with creamed corn as some reviewers have.

World's Best Lasagna

Delicious! Made as directed, except used no-boil lasagna noodles. Set noodles in hot water for a few minutes to soften, then added to pan. I made this a night in advance, set it in the fridge overnight, then baked it the following today. Definitely the best lasagna I have ever had. If you have the time, give this recipe a chance!

Delicious Ham and Potato Soup

Excellent soup! I added all ingredients as called for, except used chicken stock in place of the water. I felt the flour/milk/butter mixture could have been increased, as the soup was on the thin side. The flavor was awesome, just as others have described!

Best Chocolate Chip Cookies

I had to experiment with the temperature and time. 350 degrees tended to cook the cookies too quick, crisping the outside and leaving the inside doughy. On the flip side, one reader recommended 325 degrees. It took 14 minutes to cook the cookies at that temp--I will caveat that with the fact I live in Utah at 4600 ft altitude. In the end, I just watched the cookies brown. I used Ghirardelli chips and they were delicious!

Amish Friendship Bread I

Followed the directions, except used 1/3 cup of apple sauce and 1/3 cup of oil (instead of 2/3 cup oil). Also cut up an apple and added nutmeg and ground cloves. Greased a four mini-bread loaf pan and sprinkled cinnamon and sugar in pan. Cooked for 50 minutes--crust was over done! Next time recommend 42-45 minutes for a 4 x mini loaf pan. Taste was excellent, though!

Bundt Dutch Apple Cake

Made as directed. Like other users have stated, 70 minutes is too long. I baked it for 65 minutes and the outside was still a darker tan. Next time I will try 60 minutes. The taste itself was great. Next time I may add a little more vanilla and cinnamon. Another cook added 1/2 cup of sour cream. This may help make the cake a little more moist. For the topping, I used leftover cream cheese frosting (cream cheese & powdered sugar). Definitely will make again, but decided on four stars because the oven time seems off and no topping was suggested.
