Too much milk! Tried to thicken up the banana liquid by adding frozen yogurt and three additional bananas...still seemed on the thin side.

Lemon Delight

Childhood all-time favorite! My grandmother used to make this for me on my birthday every year. Her original recipe did not include sour cream, but it only adds to the moistness of the cake. This is almost an heirloom recipe because of the multitude of compliments and cherished memories I have of it!

VanVoorst Ham Casserole

Too much mustard. Admittedly, I only like mustard in small doses. I made this recipe using my Christmas ham. It was too overwhelmingly mustard-flavored for me to eat--but the husband had few qualms! If you like a strong mustard bite, I would recommend this. If not, be sure to cut the quantity down!

I found the directions to be a little confusing. Plus, when the recipe prints out, the footnotes are not included. (The footnotes are essential because it provides the cooking time and temperature). If this recipe gets edited, I might use it in the future.

Butterscotch Oatmeal

Reduced sugar to 1/4 cup, which was perfect. Oddly, we kind of didn't like the consistency with the egg in the oatmeal. The butter should also be reduced by half.

Oatmeal Blueberry Muffins

Great flavor! I used whole oats, instead of the quick oats. I found this added a little more texture. I read another reviewer that mentioned soaking the oats in the milk while mixing all of the ingredients. I will try that next time to see what affect that has on whole oats. I also used 1/3 cup of brown sugar instead of the white sugar and doubled the amount of blueberries to 2 cups. Finally, I added 1 tablespoon of cinnamon and 1 Tbsp of vanilla. This really seemed to make the muffins pop. My husband wasn't particularly thrilled with these, but that's probably b/c they are healthy--no fault of the recipe!

Tuna Pita Melts

I haven't eaten tuna in 4 years due to food poisoning from tuna fish. I thought I'd give this a try for my first attempt back to tuna and was glad I did! I followed the recipe, except omitted the salt. I sprinkled the tuna mixture with sea salt. I warmed the pitas on 400 F for 5 minutes as directed, then added the tuna mixture. I put the pitas back into the oven for 5 minutes, but the tuna was still not hot. I recommend 8 minutes in the oven to fully heat through.

Spinach Tortellini Soup

Delicious! I feel a little guilty not making this exactly as advertised...but I cooked the tortellini separate, baked up some chicken breasts (later diced prior to adding to the soup, and added a few diced carrots and mushrooms. I did not have any frozen spinach on hand, so I chopped up some fresh leaves. A few readers mentioned adding lemon pepper, but I thought the lemon was a little too strong. Overall, a nice soup with lots of add-ins possible (as evidenced by all of us that can't follow the original recipe on try one!) :P

Cheesy Creamed Spinach

Delicious taste. I made it using the 5 servings conversion. Only complaint was the amount of heavy cream, which called for 1/2 cup and 2 Tblspn. After making the recipe this way, it turned out to be too much. This may not be the fault of the recipe author, as it was an allrecipes.com conversion.

Red Velvet Cupcakes

good, but husband felt something was missing. after the regular ingredients, I added a tablespoon of lemon juice to the milk. No other changes were made. The cakes were moist. I managed to fit all the batter into 24 cake cups, even though the recipe called for 30 total. The cream cheese frosting seemed on the thin side.

Curried Corn

Made no changes, except had to add more curry. Tasted kind of on the bland side, which is kind of odd since it has curry in it. Had an issue with the sour cream kind of curdling and not mixing too well in with the corn.

Delicious Ham and Potato Soup

Excellent soup! I added all ingredients as called for, except used chicken stock in place of the water. I felt the flour/milk/butter mixture could have been increased, as the soup was on the thin side. The flavor was awesome, just as others have described!

Best Chocolate Chip Cookies

I had to experiment with the temperature and time. 350 degrees tended to cook the cookies too quick, crisping the outside and leaving the inside doughy. On the flip side, one reader recommended 325 degrees. It took 14 minutes to cook the cookies at that temp--I will caveat that with the fact I live in Utah at 4600 ft altitude. In the end, I just watched the cookies brown. I used Ghirardelli chips and they were delicious!

Made these according to original directions. The meatballs were okay, although the rice was still not 100% cooked in the 60 minutes allotted. The tomato sauce was a tad on the bland side. Future modifications: mix Worcestershire sauce in with tomato sauce and add, did not use previously frozen ground beef--after defrosting the meet is way too moist and poor for holding meat balls today (always use fresh). Other possible add ins: an egg or two, substitute tomato sauce with cream of mushroom, and use pre-cooked rice or orzo.

The Best Turkey Chili

Followed all directions, except I had no red wine to add. Prior to serving, I added green onions, a dollop of sour cream, and a little cheddar cheese. We found the consistency and spices excellent--truly a good balance.
