Cajun Chicken Pasta

This was delicious and a good way to change-up chicken breast (our least favorite part of the chicken). I only made small changes due to what I had on hand...I used yellow peppers and added a few broccoli flowerets. Also, I didn't have any cream so I used milk and added some flour to thicken it a little and some butter to help smooth it out and give it back some richness. I'll be making this again soon! Grilled Tilapia with Mango Salsa

Margarita Cake with Key Lime Cream Cheese Frosting

I just finished making these cupcakes for a Mexican theme party tonight and I had to give one a try first. OMG, they are fabulous! I followed the recipe except I used tequila in place of lime juice in the cake batter. I also used tequila in the frosting. Is was the perfect consistency and amount of frosting for 24 cupcakes. Everything is so delicious I can hardly wait to take them for everyone to enjoy. Thanks, Tori, for a great recipe. :D

Indian Chicken Curry II

This was delicious. The only down side is the curry smell that lingers the following day, but it's worth it. I did make the following changes after reading other reviews: 1) Used vegetable oil instead of olive oil for more a authentic flavor. 2) Cooked the dry ingredients in the oil first then added the onions, garlic and ginger together. 3) Used a whole small chicken that I boned and cut into bite-size peices as that's what I had. 4) Omitted the tomato paste and lemon juice. I served it over brown basmati rice. Can't say enough of how good this is. Thanks for sharing this Amanda.

Salmon Cakes by Melt® Buttery Spread

This is a very good basic recipe. I used some leftover baked salmon, mayonnaise instead of the buttery spread and panko instead of bread crumbs, but followed the rest of the recipe. My husband and I both thought it was very good and he ask that I make it again soon.

Chicken Livers Stroganoff

This is delicious! The only changes I made was after adding the liver I turned the heat to low and covered the pan to cook the liver slowly. Then I added a little flour mixed with water to slightly thicken it before adding the sherry & sour cream. I will be making this again!

Garden Fresh Tomato Soup

This was delicious! I did add some garlic and fresh basil and cayene pepper and I used a large sweet onion. Since I don't own a food mill, I just used an emulsion mixer. The consistancy was great at this point, but I went ahead and made the roux. I won't do that step again only because I don't think it made any difference in the soup. When I served it I added a swirl of sour cream and a couple of fresh basil leaves on top. I'll be making this again and again.

Spicy Pan-Fried Squash

This is an interesting and different recipe for squash. I used a butternut squash, as that was what I had on hand. Butternut is sweet and easy to peel so it worked well. I found this very easy to prepare using my food processor to shred the squash and onion. Also, I didn't drain it as I wanted the extra flavor from the juice of the shreded onion. I just added a little more flour to make a nice consistency then cooked it like potato pancakes. They were a nice side dish. I'd make them again. Thanks Mottsbela.

Parmesan Baked Potatoes

WOW! DELICIOUS! The only change I made was to add a little rosemary, thyme and "pizza grinder" to the butter and cheese. I've made this several times using whatever kind of potatoes I had on hand and each time they were great. By request, I've shared your recipe with several friends. Grilled Eggplant, Tomato and Goat Cheese

This is absolutely delicious! My husband and I both loved it. The only changes I made was to salt the slices and let them sit on paper towels about 30 minutes then pat dry. Then I marinated them in the olive oil & balsamic vinegar until I was ready to put the slices on the grill. I grilled one side 7-8 minutes then flipped over and added the goat cheese and tomato slices and grilled another 7-8 minutes. Also, I served them open-faced instead of sandwich style. Thanks so much for a really great recipe!

Onion Cucumber Salad

This is a delicious refreshing salad. I did make a couple changes, using Splenda in place of sugar as my husband is diabetic, and I added a little lime juice. I'll be making this often! Thanks for a great recipe!

Chile Rellenos

My husband loved these and told me I could make them every week. They really are good. I did take the advise of other reviewers and beat the egg whites separate then folded them into the rest of the batter. It made the batter nice and fluffy. Also, I used Jack cheese as I prefer rellenos with a white cheese, otherwise I followed the recipe. The best salsa to use with these is "Tomatillo Salsa Verde" submitted by Kimberly. Give it a try!

Southwestern Pasta Salad

This is a great recipe and so different than the run of the mill pasta salads. I did make a few changes...used less (olive) oil and less chili powder, used more lime juice, more cumin and more garlic. And I made the dressing a day before I wanted to use it so the flavors could blend. Also I used fresh corn I cut off the cobb and microwaved for a few minutes which added a nice sweet taste. I added a fresh jalapeno pepper and some dried cayene pepper. Also, I used a small shell pasta as that's what I had on hand. Everyone loved it and I'll make it again soon! Thanks for sharing.

Sesame Seared Tuna

This is great! The only thing I changed was using sweet vermouth (that I had on hand) instead of mirin and since I don't own a cast iron pan, I used a stanless steel skillet which worked perfect. The tuna is very rare, but just melts in your mouth. I'll make this again!

Foolproof Rib Roast

This is by far the BEST recipe I've ever used for rib roast! It doesn't matter what size roast you have, just follow these cooking instructions. I was very sceptical, but this was soooo tender and delicious. I'll only cook rib roast this way in the future. THANKS!

Tilapia with White Wine Caper Sauce

I used Dover Sole in this recipe, but otherwise made the caper suace the same. My husband raved about it and I also thought it was delicious! This was something I'd serve to company as well as fix for us again!!!

Baked Asparagus with Balsamic Butter Sauce
