Vegan Lasagna I

FANTASTIC RECIPE. I was not expecting it to come out so good. Not only it exceeded expectation, I think it may be in the top 5 best lasagnas I have ever had in my life! I made a couple of modifications - I added a lot more salt than the recipe calls for (personal preference), about 2 tbs sugar to the tomato sauce (a MUST to cut the acidity) and like a previous commenter suggested, I mixed the crumbled tofu with a roux made of flour, vegan margarine and vegetable oil. A non-vegan would never be able to tell the difference. I wasn't even expecting THAT part - the tofu is indistinguishable from ricotta cheese in this recipe! I never write recipe reviews so I was definitively blown away by this one. And I'm not even vegan, I just like the challenge (and health benefits) of vegan cooking. Thank you so much for this recipe!

Iced Pumpkin Cookies

5 stars for a really easy recipe that yields absolutely delicious cookies. The only thing I changed was the spices: I had to almost double the amount of nutmeg and clove, I tasted the batter (I know, not recommended) and it was too sweet and not spicy enough for my taste.

Dill and Shrimp Salad

Really good and easy to make, but I omitted the lime and celery and only used enough lemon to flavor the shrimp with a little squeeze over it. Also, I added a little dijon mustard since there seemed to be a little something missing and that did the trick. Great for a quick and healthy lunch. Thanks!

One Pot Tuna Casserole

Great cheap go-to meal, even for a single gal. Plenty of leftovers. I just changed the pasta ratio (I used about half the amount it called for), used shells instead of egg noodles, upped the salt (I'm not concerned about my salt intake, so don't follow my advice if you are!) and used half Parmesan and half cheddar. Deelish.

Grilled Marinated Swordfish

The flavors were good but a little too tangy.. it needed a little sweetness. Maybe more herbs. In any case what helped the marinade soak in was to poke the fish all the way through with a fork. And like another commenter I am also in NYC and it's the middle of the polar vortex so grilling isn't an option, but I used a stovetop grill which resulted in a nice aesthetic (see photo). I served it with sweet and sour kale. I would try it again and maybe make some adjustments.

Powdered Sugar

I used a food processor and followed the instructions exactly.. I processed each small batch for about 5 minutes. It was almost like powdered sugar, but not quite. Then I tried to use it in frosting and it resulted in gritty butter that I had to throw away. I'll be sticking to store bought.
