Chicken with Barley Soup

Delicious! My family raved over this tasty soup. Perfectly seasoned with lots of chicken and vegetables, it was perfect for this February night. I did use boneless breasts rather than thighs.

Contadina® Stove-Top Tomato Braised Chicken

Delicious! My family enjoyed this very much. My only change was in using dried thyme and oregano. It's easy enough to make, too. Next time, I will skin the chicken, though.

Braised Balsamic Chicken

I've made this recipe twice now, with rave reviews from my family. It's easy, takes few ingredients and it's delicious. I do cut the breasts in thirds or quarters so it will cook through faster. Other than that, I use the recipe as stated.

Simple Sicilian Salad Dressing

It's good! It tastes fresh and adds just the right amount of zest to our salads. I liked how easy it was to make, as well. I am beginning to make salad dressing in avoidance of soybean or canola oil and this one will be a staple.

Pork Chops with Apple Cider Glaze

We loved this recipe! We'll make it again, for sure. I think I'll cook the chops in a broth, though, to make them a little more tender. My family thought they were perfect; I thought they could have been a bit more tender.

Easy and Delicious Mexican Pork Chops

I prepared this for dinner tonight, subbing the picante with salsa as it was all I had on hand. Except for the fact that the rice took forever to cook, it turned out great and was delicious! I will be fixing this dish again, although I have to figure out how to deal with the rice issue. If not for the rice issue, I'd give it 5 stars.

Best Pork Chop Marinade

Excellent flavor! It's well worth putting a few minutes into making this marinade. I didn't have mesquite and will try to find it before making this again, but everybody enjoyed this very much.

Butternut Squash and Turkey Chili

I wasn't sure how we'd like this chili, but it was delicious! I did make a few changes: I drained the beans and didn't add the liquid, but I added more chicken broth, instead. I didn't add hominy, but used chick peas. Corn would have been good, too, I think. My hubby loved the spice; I would cut it back a bit. Perfect meal for a sub-zero day.

Tomato Chicken Parmesan

We loved this! I did flatten the chicken and cut it in smaller pieces before coating and sauteing. It wasn't all done at that point, but it was once I baked it for 20 minutes. I did sprinkle it with shredded mozzarella cheese and put it back in for the last 5 minutes, also, rather than baking it with cheese for the full 20 minutes.

Cheesy Scalloped Potatoes with Ham

This was the best scalloped potato dish I have ever eaten! I didn't have peas; other than that, I made the recipe as directed. We ate it as a main dish. Note: I used a mandolin to thinly slice the potatoes, so they were done in time. Being so thin, it's possible that I could have gotten away with a shorter bake, but it will take a repeat to be sure. Furthermore, I wouldn't hesitate to replace the peas with vegetables that I had available, such as broccoli, carrots or a mix.

Christmas Breakfast Sausage Casserole

I made this almost exactly as it was written, except that I didn't soak the mixture overnight as my husband was taking it to a work party in the morning. I let it soak for about an hour before baking it and the bread seemed saturated. Since my husband took the dish in and returned it empty, it was surely a hit at the office party. Thus, I plan on making it again so I can taste it!

Easy Ground Beef Stroganoff

My family really liked this meal, although I did sub fresh mushrooms for canned. I skipped the flour, also, because I forgot it. I used less water and simmered it for 20 minutes, also. It was a good and easy mid-week meal, which I'm certain I'll repeat.

Spicy Garlic Lime Chicken

The entire family enjoyed this recipe. The spice added pizzaz to the recipe, but not so much that those who don't like spicy foods would dislike it. I did cut the breasts into 3 or 4 pieces so that they would cook faster, or it would have taken much more time than the recipe called for. If one wanted to make a sauce for rice or pasta, chicken broth could be added to the sauce, scraping up the bits from the pan.

Garlic Chicken

This was delicious and flavorful! The oil and breading helped hold the moisture in. Beware however, that 30 minutes may not be enough time if the chicken breasts are large. Next time, I will either pound them or cut them in smaller pieces so they will bake faster.
