Mom's Zucchini Bread
This bread is seriously incredible! I only made half of the recipe (one loaf) the first time, and I am going to make the full recipe tonight. The first time I made it, I used whole wheat pastry flour (my favorite!) instead of the all-purpose, and coconut oil instead of the vegetable oil. I think I cut out a little bit of the sugar, and it was still very sweet. My favorite thing to do with this bread is to toast it with a little butter in a skillet, and top with peanut butter and bananas. I can't stop thinking about it! Tonight I'm going to use canned pumpkin instead of the oil. I am so excited to try it that way! :)

Pretty Chicken Marinade
Oh. Emm. Gee. This is so delicious! I used fresh squeezed orange juice instead of the lemon (I've been on an orange kick recently), dijon mustard instead of spicy brown, and fresh minced garlic rather than garlic powder. I absolutely love this marinade and will be making it again and again! Can't wait for my boyfriend to try it :)

Oatmeal Raisin Cookies IV
I modified this recipe A LOT, but the modified version turned out great, so I'm sure the original would, too. Here are the changes that I made: - Substituted 1C peanut butter for the butter (yummm) - Substituted 1/2C honey for the white sugar - Used 2 1/2C whole wheat pastry flour instead of the all-purpose - Subbed 1/2C dark chocolate chips for the pecans Because of all of these changes, I had to end up making a pan full of cookie bars instead of individual round cookies. I baked them for about 15 minutes in a 9x13" metal pan. They are DELICIOUS, although a tad on the crumbly side, and I suppose a tiny bit healthier than the original recipe. Definitely calorie dense! One thing that I won't do again is use both cinnamon and chocolate chips. I regretted doing so the minute I realized it. Cinnamon and chocolate are kind of icky together, so if you're going to use chocolate instead of nuts, omit the cinnamon. :)
