Banana Cranberry Bread

After making only half the recipe for Tyler Florence's cranberry sauce on Food Network's website, we had tons left over. Looking to use up the leftovers, I found this recipe. Have to say, while I'm a pretty good cook - I've never tried baking before. The bread came out perfectly moist, tangy and yummy! Delish!

Fish Fillets Italiano

I've made a lot of fish recipes in my time, (I'm on Weight Watchers, and my hubby doesn't really like fish), but we both thought this ROCKED! I added a mish-mash of the recommendations found here - additional spices and capers too. We didn't serve over rice, but opted for garlic bread instead to sop up the yummy sauce. One of the best!

Italian Portobello Sandwiches

OOOOH! One word: A-MA-ZING! I'm on Weight Watchers so I slightly changed this recipe to try to cut down even furthur on calories and fat. I sub'd english muffins for the bread and used Veggie Slices Provolone (soy cheese) instead of the real provolone. Toasted the muffins before assembling. Once assembled I microwaved them for 50 seconds or so until the soy cheese melted (this also brings the peppers up to the temperature of the rest of the sandwich). YUM! The only reason I didn't give this 5 stars was because it was super messy to eat.

Dumplings

Yum! I had never attempted to make dumplings from scratch before and WOW - was I pleased with the results!!! I used these in the Chicken and Dumplings III recipe submitted by Melissa. Awesome and perfect! So light and fluffy! My husband and I were both super impressed! Excellent!

Chicken and Dumplings III

Excellent! So simple and soooo good! I took the advice in the other reviewers and cooked the chicken in broth instead of water, and substituted a can of cream of chicken and one can of cream of mushroom for the cream of celery (I'm not a big celery fan...). Made the dumplings from scratch using the super easy recipe submitted by Carol. Unbelievable results! Definitely a new staple in our house :)
