Easy Mashed Potato and Roasted Vegetable Enchiladas

Add a packet of taco seasoning along with the salt and pepper before roasting veggies. Makes a WORLD of difference in the flavor. A friend of mine used the leftover potato/veggie mix to make calazones. :) Also, you can use a bag of thawed broccoli florets to cut down on time.

Irresistible Irish Soda Bread

Broccoli and Cheddar Quiche

Took this to a pie party. Wanted to make a pie that wasn't sweet and this worked out PERFECT! I used thawed out frozen broccoli. Worked just as good.

Easy OREO Truffles

This simple recipe is both cheap to make and tasty! I used reduced fat cream cheese and oreos. I also used 4 huge (movie-size) bars of Symphony chocolate instead of the Baker's. Using a double boiler, I broke up all of the chocolate in the pot and then turned the heat on. As it says in the review below, make sure to turn the heat off as soon as it's melted. Instead of using toothpicks or spoon, I used tongs, and it was a breeze to clean up.

Crab Dip

Great dip for parties! I did tweak the recipe a bit. I used half of a huge, white onion. Also used some Old Bay seasoning and minced garlic (instead of powder). Instead of using crusty Italian bread. I thawed one loaf of frozen bread, formed it to bread bowl size, brushed it with beated egg, and covered it with clear wrap as it rose. Then baked the loaf (at 350 degrees) until golden brown. Cut the top out, insert the dip and some shredded cheese, and then bake until the cheese is melted...YUMMY!

New Orleans Corn Bisque with Smoked Sausage

This recipe is great, however, I did make some changes. I ended up using Butterball Turkey Sausage instead of regular smoked sausage. I didn't use salt, but I did add pepper, basil, garlic & chilli powder. Instead of canned, like others suggested, I used frozen corn. Also, for the potatoes, I cut up red potatoes with the skin still on. This turned out AMAZING! There were absolutely no leftovers! Adding the shredded cheddar to your bowl is also a plus.

Mexican Casserole

Like some others have recommended, I ended up not using the chile pepers and used 1 1/2 cup of salsa instead. I also ended up cooking the chicken in some taco seasoning before adding it to the casserole. Using the shredded cheese, I added some to the soup mixture and then before adding it on top of the casserole, I added another layer of flour tortillas. Amazing!!!!

Chicken Paprikash

Instead of using water, used 2 cans of cream of chicken soup. Used both Hungarian and regular paprika, 4 large boneless chicken breasts cubed (instead of bone in) and added some sliced fresh mushrooms (8 ounces). Skillet cooked the chicken with Hungarian paprika. Skillet cooked the onion and mushrooms separately from chicken in butter (2 tablespoons) with regular paprika. Threw everything in a pot (including dumplings) and added the 2 cans of soup and then mixed in more seasoning and the sour cream. This was amazing!!!

Reuben-Pierogie Casserole

for a 9x13 glass baking dish, I ended up adding more to the recipe (so it made 8 servings). I doubled the amount of butter and sauerkraut. I ended up using 3 quarter pound deli sliced corned beef. Used 8 slices of Sargento's swiss cheese. An entire bottle of Wishbone's light thousand island dressing and mixed it with 1/3 cup of French's spicy brown mustard. Couldn't find rye bread crums, so I baked 5 slices of rye bread separately at 350 degrees for 15 minutes to make it hardened. Broke up the bread and put it on after the mixture boiled for 10 minutes. DELICIOUS!!!

Easy Tater Tot Hot Dish

For the meat, egg & onion mixture, I also threw in some frozen corn, season salt and minced garlic. Cooked the mixture for 40 minutes at 450 degrees. Then added the tater tots and cream of chicken and cooked at 425 degrees for another 20 minutes. Great dish!

Zesty Slow Cooker Chicken Barbecue

Thawed chicken overnight. Used the Jack Daniels Hickory Brown Sugar sauce. Also added 4 tablespoons of Spicey Brown mustard to the sauce mixture. Cooked on low for 3 hours, shredded and then another 3 hours. Served on good quality hamburger buns with mozzarella slices. Love this easy, delicious recipe!
