I love cooking all sorts of food. I've been on a big Mexican food kick lately, but I'll make just about anything.

Casseroles,soups, breads, truffles, Mexican, Italian, Polish, Slovak food.

Haven't had a problem yet. I usually eyeball my seasonings, because I like a lot of flavor.
My cooking tragedies
I left the stove on low by accident for one of my soups. All of my stuff was burned on the bottom.

Spinach Roll-Ups
Instead of the mayonnaise, I used the suggestion of garden vegetable cream cheese (8 oz.). I also used the suggestion of fiesta ranch packet. Draining the spinach is a MUST! Instead of the tablespoons of onion, I used one white small,diced onion. After spreading the mixture on each tortilla and rolling, I put them in a gallon ziplock bag and froze them for 2 hours. They are much easier to slice and it cuts down on time. Refrigerate after slicing. Taste great cold! They were devoured! :)

Easy Mashed Potato and Roasted Vegetable Enchiladas
Add a packet of taco seasoning along with the salt and pepper before roasting veggies. Makes a WORLD of difference in the flavor. A friend of mine used the leftover potato/veggie mix to make calazones. :) Also, you can use a bag of thawed broccoli florets to cut down on time.

Zesty Slow Cooker Chicken Barbecue
Thawed chicken overnight. Used the Jack Daniels Hickory Brown Sugar sauce. Also added 4 tablespoons of Spicey Brown mustard to the sauce mixture. Cooked on low for 3 hours, shredded and then another 3 hours. Served on good quality hamburger buns with mozzarella slices. Love this easy, delicious recipe!
