Coffee Kahlua Butter Frosting

I am using this as the frosting for Cake Balls by Allison. I followed suggestions and decreased the sugar to 1 cup. I needed a more intense flavor to use in the cake balls so I used 3T. cocoa, 3T. coffee, 3T. kahlua. Very good!

Squashed Washington

This was excellent. My garden has an abundance of squash that was mislabeled as zucchini. I don't really care for squash. Found this recipe and I will definitely make again. My husband loved it too, though he thought you should rename it "Squashington."

New Orleans Corn Bisque with Smoked Sausage

My whole family loved this...even the kids. I didn't have all the ingredients, but my substitutions worked out great. I didn't have an onion so I used minced dried onion, I personally would prefer the fresh onion, but it worked in a bind. I only had a little frozen corn and one can of creamed corn. The creamed corn helped thicken the soup and gave a little sweeter flavor too. Instead of cubed potatoes, I threw in my leftover "Roasted Root Vegetables with Apple Juice." I also added garlic as other cooks suggested and I would have definitely added the can of green chilies if my son was a spicy-lover like the rest of us. Instead, we just sprinkled lots of Penzey's Black and Red pepper on our own bowl to give it some heat.

Apple Brie Quesadillas

The taste of this was fantastic...even my daughter, who hates fruit and veggies, enjoyed it. The smell when you cook this is wonderful too. My only problem was serving this in smaller portions as an appetizer. I tried cutting the tortillas with a pizza cutter, but it was a sloppy mess. I will have to practice more!

Tomato and Mozzarella Bites

This got lots of rave reviews from our family. Instead of the balsamic vinegar, I made Penzey's Italian dressing and drizzled over the plate of bites. A great appetizer that doesn't feel so "heavy."

Roasted Root Vegetables With Apple Juice

I served this with ham at Christmas dinner. I divided up into two large roasting pans. Unfortunately one pan burnt to the bottom; the other was perfect. I served the two parts together and no one noticed any difference. Actually the burnt parts are quite tasty.

Orange Loaf

We gobbled this up in one day. I will take the suggestion to reduce the glaze and brush it on after you take it out of the pan next time. Now that my daughter is allergic to wheat, it was disappointing not to be able to make this recipe. But I found replacements that work great. Follow the recipe exactly except the replacements below: 3 eggs instead of 2. 1 cup gluten-free all-purpose flour plus 1/3 cup coconut flour instead of 2 cups all-purpose flour I also added one scoop vanilla whey protein powder and 1/2 cup of white chocolate chips. Instead of a loaf, I made muffins baked for 20 minutes. (FYI, my oven runs about 25°F below temperature)

I used olive oil, 1/2 lite sour cream and 1/2 2% milk to lighten. Fresh garlic and lemon juice too. Very good recipe!

Easy Garlic Chicken

My daughter is allergic to butter, so I replaced with olive oil. No fresh garlic, so I used bottled minced garlic (3 tsps). I also added an Italian spice blend to my plain bread crumbs. Excellent!
