Gluten-Free Orange Muffins

We gobbled this up in one day. I will take the suggestion to reduce the glaze and brush it on after you take it out of the pan next time. Now that my daughter is allergic to wheat, it was disappointing not to be able to make this recipe. But I found replacements that work great. Follow the recipe exactly except the replacements below: 3 eggs instead of 2. 1 cup gluten-free all-purpose flour plus 1/3 cup coconut flour instead of 2 cups all-purpose flour I also added one scoop vanilla whey protein powder and 1/2 cup of white chocolate chips. Instead of a loaf, I made muffins baked for 20 minutes. (FYI, my oven runs about 25°F below temperature)

Chef John's Chicken and Biscuits

Everyone loved it. I had to make gluten-free adaptations for my daughter, but it was still a hit. I hand made biscuits using Namaste Foods Gluten Free Biscuit mix. This recipe takes a lot of time so I will save it for special days or when I am craving comfort food.

Enchilada Casserole III

I added a can of Rotel tomatoes to make it spicier. I also didn't have the dry enchilada sauce mix. I just eliminated the water/mix and replaced it with a can of enchilada sauce. The whole family loved it.

Pork Tamale Pie

My family loved it. I changed it a bit because of what I had on hand. I had leftover Dee's Roast Pork for Tacos and used that to simmer in beef broth. I used a can of Rotel tomatoes because we like it spicier. I didn't have a can of corn, so I used frozen. Because the recipe didn't state to drain some of the canned goods; I didn't. That seemed to work out just fine. I also took the suggestion and layered the pie: meat, corn mixture, and then topped with shredded mexican cheese (because we love cheese). YUM!

White Bean Chicken Chili

Quick, easy, and delicious recipe. I added curry leaves to this just because I had some I needed to use. This produced a nice smokey flavor. I also sautéed the onion with the spices instead of putting them in later.

Lemon Cupcake with Blackberry Buttercream

Vegetarian Korma

I did add boneless chicken thighs to this thinking my vegetable-hating daughter wouldn't eat it. My entire family loved it, so I think I could have left off the meat and they wouldn't have noticed.

It was okay. I used lower-fat cream cheese, so I suppose the full-fat version is what makes it awesome. I'd have to experiment to see how to keep the dish healthy and tasty.

Mac and Cheese Soup

My 12-year-old daughter and I made this together. We really liked it, though we did make some changes. We didn't have jar cheese sauce so we made "Glen's Cheese Sauce." I think I would always use that as the cheese base instead of something processed. We decided to leave out the bouillon and just added more chicken broth at the end to thin the consistency out a little. We were confused by what "ground red chili pepper" is exactly. We replaced with cayenne pepper. Wow! That was spicy, which we both like. But I can't serve it to my son, so I think we would reduce that by half or use paprika instead.
