Golden Oven Omelet

I wanted to make this but there are only 2 of us & then I saw the scaled down review by Mariele. I followed her direction of using 2 pyrex cups for 30 minutes, they came out perfect. I microwaved the butter to coat the cups, I only had sandwich ham slices which I chopped & omitted salt, also added some pepper jack cheese, I think you could use just about anything to your liking. These would be a great way to serve guests.

Guinness® Corned Beef

very good, I only added 1/2 c of brown sugar after reading other reviews. Made in slow cooker with veggies on the bottom & a bottle of Guiness, I could detect no beer flavor. Beef was very moist and veggies flavorable. Would make again.

Strawberry and Feta Salad

I served this at a work potluck for 40 people I adjusted the qty but it was a huge hit I should have made more . After reading the reviews I used less oil, it would have been too oily had I not. Also use mandarin oranges, I also toasted the almonds and tossed with sugar at the end of toasting to give them a sweetness.

Fancy Potatoes

I cheated due to time contraints and used the frozen steam & mash, 1 plain & 1 garlic flavored. I also used 1 8 oz package cream cheese & milk to desired consistency & topped with cheese. Made mid morning & kept them cool by placing in cooler with a few frozen ice chillers. This dish was a BIG hit, my 13 yr old granddaughter said "these are the best potatoes you have EVER made". she was even making sandwiches with rolls and the potatoes. I had leftovers for next day dinner party, added a little water to dish and reheated in 200 degree oven, they never knew they were leftovers!!

Slow-Cooker Corned Beef and Cabbage

Very good, but I am not sure if the directions said to cook on high for 9 hrs?? That seemed too long on high, I cooked on low for 9 hrs and then my slow cooker turned to warm for the next 1-1/2, it was moist and delicious. I also used red potatoes, unpeeled and cut in 1/2 & baby carrots, they were not mushy either. Would make again this way.

Ultimate Twice Baked Potatoes

everyone loved this recipe, I made ahead earlier in the day and put in convection oven after taking out the prime rib, baked at 350 for 15 minutes.

Garlic Prime Rib

Instead of garlic blubs I used bottle pureed garlic I had purchased from Williams Sonoma. This is a very good recipe! I had a 4 lb roast & used my convection oven, 425 degrees for 20 min. then 325 for 1-1/4 hr for med rare.

Grilled Whole Turkey

I brined the turkey for 24 hrs prior, because of this I omitted the bouillion but used 1 cup water, 1 cup white wine and all other spices listed. The 12 lb bird was done in 3 1/2 hrs, very moist and flavorful. I also used an disposable aluminum pan so no clean up!

Black-Eyed Pea Gumbo

I tweaked recipe because of lack of ingredients & still turned out great, I used 2 cans black-eyed peas, 2 cans cannelini beans, 1 can fire roasted diced tomatoes & 4 oz can of whole green chiles, which I chopped. Also added one more cup of broth. Everyone loved it. Easy to make & use what you have!

Beautiful Salad

teens and adults really liked, I used spinach & romaine to give it more crunch. I made early in day, omitting nuts & cheese, put on salad plates & covered. At dinner time, I added the nuts & cheese for those who opted for them.

ground turkey/pork Meatloaf

I used ground turkey & pork, because of other reviews saying it was bland I really spiced it up. We live in San Diego & I have a Mexican spice called Pozole y Menudo but I use it for salads, soups etc, it's a combo of oregano, chiles, garlic, onion, salt & cilantro seed. I also used V8 to keep it moist, chopped onion. I put on a cookie sheet & baked in a 350 degree oven for 1 hr. Stayed moist & very flavorable.
