Chocolate Pretzel Rings

The kids loved helping with this recipe but the kisses didn't melt well at this time or temp. The chocolate cracked and looked dreadful or didn't grab around the pretzel enough and fell off easily.

Panzanella Salad

Alaska Salmon Bake with Pecan Crunch Coating

Steamed Clams in Butter and Sake

This was very different than any other clam dish I've had. It was very sweet; actually much sweeter than I expected. I'd make it again but I'd love to know what others are serving with this dish. I served miso soup but that wasn't a very good match to the flavor of this dish.

Miso Soup

Wow-This was an exact match to Miso Soup served in the restaurants around town. Don't change a thing because this is absolutely perfect and so simple & inexpensive to make. A winner all around.

Lebanese-Style Tabouli

After making this I was left wondering if there were some serious errors on the qtys of ingredients. This initially came out as a big soupy mess. 1/3 cup of bulgur wasn't nearly enough so I ended up going back and hydrating another cup of dried bulgur and then adding it to the rest of the ingredients. Before I added more bulgur, I had a bowl of parsley, mint and tomatoes floating in lemon & tomato juice. Since this was already so soupy I only used half of the olive oil and I also cut back on the salt. You might consider seeding the tomatoes to cut back on the liquids. This was also much more lemony than any other recipe I've tried. I didn't mind the lemon flavor but it was much more prominent than any versions I've been served before.

Easy Key Lime Pie I

This was raved about by my husband and dinner guests. Like other reviewers, I used 4 egg yolks, 2 cans of sweetened condensed milk, precooked the pie crust until golden and I used 1c fresh key lime juice. I also had to increase cooking time to 25 minutes. Juicing the key limes is a little time consuming since they're soooo small. I've got a little pie filling left that I plan on using as a filling for mini tarts topped with fresh rasberries.

Vegetarian Southwest One-Pot Dinner

This recipe is missing the liquids needed to cook dried beans. You need at least 2 1/2 cups of liquid for 1 cup of beans. I didn't drain the corn and added 2 cups of veg broth and 2 cups of water. I topped with grated cheddar. It turned out like a cousin of chili.

Quick and Easy Clam Chowder

This was tasty. I used reduced fat soups and fat free half & half to make this a little healthier. I also added some red cubed Red Potato with the skin on for a little extra color and texture.

Wild Rice Casserole I

This was a gloppy mess.I followed the directions exactly but the rice turned to mush. The taste wasn't bad, just standard comfort food that has too much salt and fat to be healthy. I guess if your serving people that can't chew their food this would be ideal.

Sweet and Spicy Soup with Black-Eyed Peas and Sweet Potato

My husband has declared this "the best stew". I used fresh black eyed peas and a fresh sweet potato. Since I used fresh veggies I had to increase the veg broth to 3 cups and I was also more generous with the sugar and spices. I also increased the cooking time to about 40 minutes. This was very hearty and easy to make.

Blueberry Cherry Pie

Like the recipe but I make a lot of modifications when I bake this. I add more fruit, 1/2 of the sugar, 1/2 of the cinnamon and bake for about 15-20 minutes longer...depending on how often my husband opens the oven to check the pie.

What a knock out dish. Something totally different that was perfect at the last BBQ I attended. I've even made this without the cabbage (cut the celery seeds in half if you do. Thanks for the recipe!!
