Whipped Cream Frosting

All I can say is WOW! Made a cherry chip boxed cake for my daughter's birthday and realized that I had no frosting. Found this recipe and had all the ingredients (lucky me!). This was excellent considering it was a last minute throw together. All our guests raved! I think I want to make fruit tarts with this as the topping...endless possibilities.

Meatball Soup

Playgroup Granola Bars

We call these "cookies" in my house, but they are the healthiest cookies EVER as far as I'm concerned. I've even switched out the egg for 1/4 cup of unsweetened apple sauce (we have an egg allergy here) and they still turn out great. I started to add dried cranberries to the raisins, and I usually use more than are called for and have even added flax seed meal. It seems like there's just no way to mess these up. My husband low carb/low GI diets so I altered it for him as well, using splenda brown sugar and different fruits (dried pineapple and mango) with a few extra varieties of nuts.

Colleen's Slow Cooker Jambalaya

This is one of my husband's favorites. We leave out the shrimp as we have a picky 7 year old, but it's otherwise wonderful. I also leave out the cayenne and we usually only have polska kielbasa on hand, but it's still tasty.

Sausage Pasta

This one gets a thumbs up in our house. I always make it with fresh spinach as we're not fans of frozen. It's great in the summer, as it's not too heavy. I've even cheated and bought Jimmy Dean's pre-done sausage so I don't have to heat up the kitchen so much. My one complaint is that the noodles go mushy if you like left-overs the next day. Maybe they could be kept apart until eating? Also, when I re-heat it (despite the mushy noodles) I like to add a bit more spinach as it "shrinks" considerably by the next day.

Chicken and Lentils

I really love this meal, but husband is only so-so about it. Maybe he just doesn't appreciate lentils. Aside from soaking the lentils beforehand, this meal seems to come together pretty fast. The cooking time allows me to get my kitchen mess cleaned up which makes after dinner clean-up that much easier.

Butter Flaky Pie Crust

Excellent for my beef pot pie recipe. I recommend using a food processor if you have one to blend the dough. Gets it done in a snap.

Penne with Chicken and Asparagus

WOW! An amazing dinner with such simple ingredients. Daughter (6) and Husband both give this 2 thumbs way up. When it was almost finished I had the urge to add about 1/3 cup of cream. The sauce was still on the thin side (not like alfredo or anything), but it just made it so comforting. The original way would be great for a summer meal, I think. But for a windy, grey day the cream was a perfect addition. We all had seconds!

Sauteed Swiss Chard with Parmesan Cheese

Just joined a CSA and swiss chard was in our basket this week. I'm ashamed to say, I've never eaten it before now. I gave this 4 stars because my 6 year old didn't care for it, so maybe it's not entirely kid friendly. I, on the other hand, thought it was great. Husband thought it was okay, but his hopes weren't high in the first place. I didn't have red onion (yellow worked just fine) and I didn't have white wine (veggie stock seemed to work great). Plus I used lemon juice from a bottle . My guess is that this would be hard to mess up...and I like that in a recipe!
